Chicken breasts, tin tomatoes, courgette, cabbage, carrots, mushrooms and rice. Any ideas will be great.

finely chop the carrots into long strips, chop mushrooms finely, the same with the cabbage. chop up chicken and fry in a pan with a little oil add the veg fry for 4 mins and add the tomatoes then simmer for 15 mins than slice the courgets and put in for 2 mins. boil rice and there you have it. make sure you add salt and pepper to taste and that the chicken is slightly brown before adding tomatoes

I'd do a casserole and use the tinned tomatoes as the base, leave the chicken breasts whole, add chopped courgette, carrots, whole mushrooms (leave out the cabbage though) and bake in the oven for about an hour. Serve with the rice - you could add some spices to the rice to make it nice!

Hi!
Try this:
1. Cut the chicken breasts into thin strips.
2. Puree the tomatoes.
3. Chop the veg.
4. Cook the chicken in a frying pan, adding the tomoatoes and the veg EXCEPT the Mushrooms, once the chicken has browned.
5. Boil the rice. Finely chop the mushrooms.
6, Once the chicken and sauce has been simmering away for about 15 mins, add a few herbs (I recommend Basil and oregeno) to give it a bit of a kick.
7. If you can, add a stock cube to the rice. Otherwise, just drain it off into a bowl. Mix in the diced mushrooms. Place a ring of rice on each plate.
8. Place the chicken and sauce mix in the centre of the rice ring.

and Voila!

Well, I don't know what courgette is but you've got the basics for chicken and rice. First, throw out the cabbage (yuck). Boil the chicken (preferably with spices like red and black pepper and saffron if you have them), then use the broth to cook the rice. Add the mushrooms and it's done.
You could also make make chili. Dice tomatos if they aren't already, slice carrots and mushrooms. Simmer together. Add salt, pepper and chili powder. Bake the chicken; dice and add to mix. Cook the rice and add.

Roasted , or at least a well cooked chicken on fluffy rice with me be deep fryed mushroom or even courgette with grated carrots on the side sounds not to bad if you don't have much happy eating .

You can cook the chicken breasts whole, or chop them up...

Saute 1 onion, and 1 tbsp of garlic in 2 tbsp of oil. Add chicken and saute until outside of meat is white.

Add canned tomatoes and season with Italian seasoning.... (oregano, basil, rosemary etc).

I usually cook it on Med/low heat covered with a lid.

Add veggies when chicken is almost done cooking. (if it is chopped it will be a shorter amount of time)

Cook rice separately. Just remember 1 cup rice/ 2 cups water. If it is white rice, cook on med high heat until water is almost completely gone. Turn heat down to low and cover to cook until done.

Serve chicken and veggies over the bed of rice. It is always good topped with Parmesan cheese!

soup for starters and fried chicken strifry with grated carrot ,cabbage shredded and mushroom and rice add some soy sauce add courgette too

I'd make a ratatoille with the veg, cook the chicken breasts in foil with a bit of lemon juice/ herbs whatever you have to season. And make some boiled rice with coriander.
