I believe that is white truffle!(kind of mushroom)
You can only find it in Piemonte,Italy.They used to train pigs to dig them out of the ground. Now days dogs are used for this purpose.
The cost per kilo is 3000 Euro!!!!!!!!!!!!!!1

I was thinking truffles too, except I'm not entirely sure they count as a vegetable....If they do though, they win hands down.
If not, I'd say anything Organic and out of season. You can pay an arm an a leg for an organic asparagus spear in February!!!

Vegetable is a very loose term. I would say truffles or saffron which is not technically a vegetable but is part of the vegetable world.
