Yes you will. Just make sure that the place you are staying has AMNET (cable provider). I am pretty sure I've seen footbal games on monday on AMNET channels 69, 70 or 71.
If you go to a place where they have CABLE COLOR (another cable provider) you probably won't be able to see football because they do not carry US channles. By this I mean they do have HBO but it is HBO ole, they do have Cinemax but it is Cinemax 2. And they do not have the totally english no subtitle channels on this cable provider. Just those channles that are tailored for spanish speaking people.
It very hard to get satellite TV in Honduras, of course there is service but you probably won't get it in the hotels or restaurants or if you stay in a rented apartment you will find out it is kind expensive.
But on the safe side ask for AMNET cable cause I am a 100% sure I've seen football on one of the three channels I mentioned before.

Can't you live without your sports just for that monday? : )
Anyway, yes, there is ESPN in the most of the hotels, and if you don't have it, you can always go to a bar, or in a restaurant to have a drink, and ask the bartender for that channel.
Just remember the time difference; nobody here knows what time is in your country. xD

yes you will get sports news anything you want. satellite tv is most every where. i use to go to watch world news and sports at hotel grand Sula and many other places.

Depends where you stay. Cable and internet are available.
And odds are that you can find a bar maybe TGIF's that will show it.
