Some folks add a little Cinnamon - Orange rind is nice too. Bits of fruit is nice too...BUT...be careful as fruit is wet and can flatten or lessen the taste of your pancakes if you add too much fruit to too little batter.

Can't answer how much without knowing the recipe..what is "regular"? You should be able to tell by looking at the amount of batter you have how much you can add, I'd say for a batch to make 8 pancakes, I'd add a quarter teaspoon of Cinnamon with a quarter teaspoon of sugar...about the same for orange rind

Pennsylvania Dutch spice mix.

2 Tablespoons & 2 teaspoons cinnamon
1 Tablespoon & 1 teaspoon ginger
2 teaspoons nutmeg
2 teaspoons cloves

Mix them up and put them in a shaker bottle. You could put half a teaspoon of mix in the batter for the pancakes. You could also mix it with some sugar (proportions to suit you; I like it pretty rich) and sprinkle it on a buttered pancake. Yummy!!!

Just stir in some things to add flavor. Depending on how much mix you have, just add enough to swirl through the entire batter. Pick your favorite flavors! You could add any type of berry, chocolate chips, crushed up nuts, cinnamon or bananas. Just be careful if you're using a fruit, because more liquid will be added, so don't over do it. Start of with a drier than normal batter.

Applesauce, sliced fruit of your choice, honey and raisins are all great add ins for pancakes. You will have to experiment a bit to see how much of each you would like. I would start with one quarter to one half of a cup of each item for each mixture. Pancakes are a great way to encourage all, especially children; to eat some items which are healthier for them in a little bit of a sneaky way. I also add a couple of ground teaspoons of flax seed to most of my recipes; as we can also use the extra fiber in our diets. If you add applesauces and fruit, or fruit sauces, you will need to cut back your liquid content a bit, in order for the mix to not be too runny. Adding in a bit of cinnamon can really add an entirely new taste to pancakes. If your kids like Mexican style food, you can thin the mix a bit, they will turn out a bit like crepes, and then fill them or top them with salsa and cheese. This can be adapted into a quick and filling weekend night supper. Have fun and happy eating!

Real Vanilla, subtle but really adds a made from scratch flavor. About a 1/4 to 1/2 teaspoon mix with the liguids going in to the mix.

If you just want plain old pancakes with no chocolate chips, fruit, or other things, add 2 drops of vanilla extract to the mix--that's what the best breakfast restaurant in Chicago does.

I like a handful of fresh ripe blueberries in my pancake mix.
They burst with flavor when cooked in pancakes. Yummy Yummy.

For a single batch, put in 1 TBSP Vanilla extract, and 1/2 TSP Cinnamon. Also, if you like, you can slice bananas (or use blueberries). Put them in the buttered pan for a minute and pour the batter over...
