Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Whole-wheat and spinach pastas, white meat chicken sauteed in olive oil, garlic, fresh oregano, fresh basil, a few pine nuts, and a moderate amount of Romano cheese. (I like Romano because it tastes best but you can use Parmesan instead if you want.) Generally speaking, pasta is a high-glycemic carb which is not great, but using whole-wheat and spinach pastas will help some. Don't go crazy on any of the ingredients, even though they sound healthy. Whatever you do, stay away from the Alfredo sauce. If it's made right it's incredibly high in fat, calories and cholesterol, and if it's not made right, it's not worth eating.

Wholewheat pasta with chopped tomatos, tomato puree, mixed italian herbs, mushrooms, olive oil, chopped green and red peppers and grated low fat cheddar cheese.
Boil the pasta for about ten minutes. Mix everything else in a large pan and stir on medium heat. Finally add the cooked pasta to the rest and stir some more. All ready in about 15 minutes. Yum.

I made this the other night and it was super good and duper easy .
you will need:
1 box long skinny pasta- (linguini-angel hair-spagetti) whole wheat
3 C chopped fresh tomato
2 TBL Olive Oil
2 -3 TBL chopped fresh garlic
2 TBL Balsamic vinegar
(optional)~ a little bit of good grated or shaved cheese or fresh mozz...
Cook pasta. Drain and set aside. Cook garlic in the olive oil untill fragrant and golden, add tomatoes and cook just for a moment or two or untill warmed through, add balsamic & then add the whole mess to the pasta and you are donezo! Add a little cheese to each dish and viola', dinner is served. (This recipe is very good leftover, too ).

This is really easy to make and delicious. It also looks very pretty. You might have to wait until the spinach scare goes away. There's no spinach in the stores right now.
Crab in Tomato Sauce Pasta
1 pound of flaked blue crab meat (I use imitation and it works fine)
2 tablespoons of margarine
1 tablespoon of olive oil
1 medium chopped onion
3 cloves of garlic
2 tablespoons flour
1 can (16 oz) Rotell Tomatoes - Undrained
1 cup of chicken broth
½ teaspoon Each of salt, cayenne, and black pepper
4 cups of fresh spinach (or 10 oz box of thawed frozen spinach)
2/3 cup Parmesan cheese
Hot cooked spaghetti or other pasta
In a large skillet, combine margarine and olive oil and saute onion and garlic over medium heat for 2 to 3 minutes. Add the flour and cook and stir until flour is well blended. Stir in the tomatoes, broth, salt and pepper. Bring to a boil, reduce heat, cover and simmer for 10 minutes. Add crab meat and cook for 5 minutes. Stir in the spinach and cook until fresh spinach wilts or the packaged spinach is hot. Toss hot pasta with 1/3 cup of Parmesan and then pour your crab-tomato sauce over the pasta. Serve hot with remaining Parmesan cheese sprinkled on top. Makes 6 servings.

Brown Pasta
1 tin tinned tomatoes
1 dsp of tomato puree
50g chopped sun dried tomatoes
3 cloves of garlic
courgette
mushrooms
onion
aubergine
1 red pepper
1dsp olive oil
1 chili finely chopped
Use all of the above to make a vegi sauce, its got a really low GI and fat content and is one that I make for my Dad who has type II diabetes. You can also mix the sauce in with the pasta, put it in a baking tray and put slices of half fat mozzarella on top and bake for about 20 mins.

I am all about wheat pasta with green, yellow, and red peppers!! After pasta is cooked, sautee veggies (sometimes with a jalapeno peper for extra bite) in olive oil, toss, and enjoy!
Highly recommended with a glass of white wine!

Blitz up your favourite fresh herbs in a good glug of olive oil, add some garlic and some parmesan cheese (just a little bit!!) pour over cooked pasta and serve. Simple, fresh and tasty. I prefer it with loads of cheese!
