A large proportion of the U.S. chicken supply is contaminated by salmonella due to the conditions in which chickens are typically raised and then processed by large suppliers.
Any meat is safer when it's cooked more, in principle, but widespread contamination of meat is a by-product of factory-farming and our system of distribution. Local, farm raised meat is rarely so contaminated.

If you were ever to visit a chicken processing plant, you would know better than to ask this question. Try it someday. Go to your local Truck stop and ask some truckers about the closest processor in your area and go for a visit. Imagine if you will, placing an egg into a 12 inch cubical screened cage. And watching your chicken hatch and grow to maturity over the course of 6 to 9 months along with all the food nessesary and all the excrement and dirt, feathers and other contaniments that go along with the raising of this chicken. Exclude the mental thoughts you have of chickens being grown in nice neat little barn yards with all the other animals. And you'll have a pretty close imagination of how they are processed. Now gather up say 10,000 maybe 15,000 of these birds and throw them into a very large vat of boiling water to 1. Kill and 2. strip the feathers off. Then begins the butchering process of degutting and cutting. Need any more be said ?

All of the above plus this:-
You must cook the chicken at a heat of minimum 70 deg. C to ensure that the bacteria or anything of the sort does not remain. It is very safe to eat after that. That is what our Government recommends, especially after the recent 'bird-flu' reportings throughout the World.

It commonly has salmonella that's easily killed by cooking. This is due to the way it's processed and handled. Some modern processing methods are not very sanitary at all. There's an FDA website that has tips on cooking and avoiding food poisoning. Here is a good, all purpose guide that I use.

Salmonella is the main reason. Now for ways of cooking, it's bad for us to eat the chicken skin, cholesteral is very high. I myself have always ate fried chicken--until last March!! We had fried chicken at home, ate dinner around 6 pm that night and all was well. 1:00 am I woke up and was in severe abdominal pain, and had serious diarhea and vomiting. It was cold that morning, living in Ohio, husband heard me up but the children where sound asleep, was cold and the hospital was close, so I drove myself to the Emergency Room. I found out that after all of these years, I've become allergic to chicken skin!!!!! It made me so sick that I really wanted to die, and they way I felt, I didn't think I had a chance to live!! I personally will NEVER eat the skin ever again!!!!

There is bacteria in raw chicken (and meat and fish) that is killed by the cooking process. If the food does not get thoroughly cooked, it does not reach the temperature hot enough to kill all the bacteria and you can get sick from eating it.
That is it in a nutshell. Hope it helps! ;-)

Its not the chicken its self that is bad for us, but the bacteria growing on it. Cooking it well kills the bacteria making it safe to eat, however if the meat cools down to slowly bacteria can regrow. Also keep away from other uncooked meats, they can reinfect it with bacteria that can make you ill, and even kill.

Salmonella.
You need to thoroughly wash your chicken in water and pat dry. Then cook completely (no pink).
