1. Stock materials are materials that we record stock levels for. An example would be a raw material in our production process. On the other side is a non-stock material which is something such as paper or pens. We don't really care how many we have, so we don't record the quantity we have in stock.

2. Configuration is the way in which the way SAP behaves is controlled. Various aspects of the transactions can be configured according to business requirements.

The material types that you use are configured in Customizing for the Material Master under

Logistics Master Data : Material Master -> Material -> Control data -> Define material type attributes
