I would like to make some for my husband this weekend, any recipes?

Chocolate Chip Banana Muffins:

1/3 cup vegetable oil
1/2 cup sugar
1 egg
3 mashed ripe bananas
1/2 package chocolate chips
1 cup all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon

-mix oil, sugar, egg and mashed bananas
-add 1/2 package of chocolate chips
-mix flour, baking soda, salt and cinnamon
-add to banana mixture and stir until moist
-put into 12 muffin tins that has been lined with cupcake holders and put 3 chocolate chips on top of each muffin
-bake 350 degrees for 17-20 minutes

1 cup all-purpose flour
1 cup graham cracker crumbs
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, at room temperature
3/4 cup yogurt (regular, low-fat, or nonfat)
3/4 cup milk
4 tablespoons unsalted butter, melted and cooled
2 teaspoons vanilla extract
2/3 cup semi-sweet chocolate chips
3/4 cup mini marshmallows

In a bowl, whisk the flour and next 5 ingredients togehter until well blended; set aside.
In a big bowl, whisk the egg until lightly beaten; then whisk in the yogurt until smooth.
Whisk in the milk, melted butter, and vanilla.
Using a wooden spoon, stir in the chocolate chips and marshmallows; then stir in flour mixture until the chips and marshmallows are evenly distributed in the batter (don't over mix).
Fill muffin cups that have been sprayed with nonstick cooking spray 3/4 full.
Bake in a 400 degree oven for 20 minutes or until muffins have firm, rounded, lightly browned tops; a pick should come out with a few crumbs attached.
Place pan on a wire rack to cool 10 minutes.
Turn out muffins; cool on wire rack 5 minutes.
Cool muffins completely before storing in an air-tight container or freezing them in freezer bags.

Blueberry Muffins

6 Tbsps butter or margarine
1 1/4 cup sugar
2 large eggs
2 cups flour
1/2 tsp salt
2 tsps baking powder
1/2 cup milk
1 pt blueberries
2 tsps sugar

Cream butter and sugar very well. Add eggs one at a time and beat well. Stir flour, salt and baking powder and add alternately with milk. Remove 1/2 cup blueberries. Crush them with folk and mix into batter. Then add rest of berries. Bake at 375± for 30 minutes. Sprinkle with sugar before baking.

Grease pans. Beat egg. Stir in milk and oil. Mix in other
ingredients. Batter should be lumpy. Bake at 350 for 20 to 25
minutes. Yields 12 muffins. lmmediately remove from pans.

Blueberry Cream Muffins

Yields: 24 servings
"Rich and delicious blueberry muffins. The secret is the sour cream."
INGREDIENTS:
4 eggs
2 cups white sugar
1 cup vegetable oil
1 teaspoon vanilla extract
4 cups all-purpose flour

1 teaspoon salt
1 teaspoon baking soda
2 cups sour cream
2 cups blueberries
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper muffin liners.
2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20 minutes.

Banana muffins:
Ingredients:

dash of salt
1 teaspoon of vanilla


Preparation:
Beat the margarine and sugar in an electric mixer until light and creamy. Add the eggs, flour, soda, salt and vanilla till smooth. Mix in the mashed bananas. You can also add a cup of chopped chocolate, pecans or walnuts.
Bake at 350 degrees in a greased and floured loaf pan or cup-cake pans. Makes 2 loaves (bake about 1 hour) or 5 dozen mini muffins (bake 18 minutes). The loaves are done when cake tester inserted into the loaf comes out clean and the loaves are a golden brown.
Baking time will vary depending on your oven.

This is one of the best muffins you will ever taste! Taste even better the next day!

MORNING GLORY MUFFINS

2 c. flour
1 1/4 c. sugar
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1/2 c. raisins or dates
1/2 c. chopped nuts
1 grated apple
1 c. vegetable oil
3 eggs
2 tsp. vanilla

Combine first 9 ingredients, then add last 3. Mix well. Bake at 350 degrees for 25 minutes. Makes about 2 dozen.

Pumpkin Muffins

1 large can pumpkin
2 cups flour
1 cup sugar
1 stick butter
1 tsp baking soda
1tsp salt
2 eggs

mix dry ingredients and wet ingredients seperately, then mix together and put in muffin pans til done.

Frannies Fantastic Fruity Muffins
Light Pineapple-Cinnamon Flavor

1/4 cup milk
1/4 cup vegetable oil
2 large eggs
1 (15.2 ounce) package cinnamon streusel muffin mix
1/2 tsp. ground cinnamon
1 (8-ounce) can crushed pineapple in juice
3/4 cup grated peeled Granny Smith apple (about 1 small apple)
3/4 cup chopped pecans (optional)
1/2 cup raisins
Vegetable cooking spray




Mix together all ingredients until blended. Save streusel packet from mix for another project.

Place baking cups in muffin pans. Spray with cooking spray. Spoon batter into cups, filling 2/3 full. Sprinkle evenly with reserved streusel packet.

Bake 425 degrees F. for 18-23 minutes or until golden brown. Cool in pans on wire racks 5 minutes. Remove from pans and cool on wire racks.

These morning glory muffins are easy to make, and they rock! :P

Ingredients
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1-1/4 cups packed brown sugar
2 medium apples, peeled, cored, and chopped (1-1/3 cups)
1-1/4 cups finely shredded carrots
1/2 cup raisins
1 8-ounce can crushed pineapple (juice pack), undrained
2/3 cup cooking oil
3 eggs
1/2 teaspoon vanilla

Directions
1. Line eighteen 2-1/2-inch muffin cups with paper bake cups; set aside.

2. In a large bowl combine flour, baking soda, cinnamon, and salt; stir in brown sugar. Stir in apples, carrots, and raisins. In a medium bowl combine undrained pineapple, oil, eggs, and vanilla. Add pineapple mixture to flour mixture; stir just until moistened.

3. Spoon batter into prepared muffin cups. Bake in a 375 degree F oven about 18 minutes or until a wooden toothpick inserted in centers comes out clean. Cool in muffin cups on wire rack for 5 minutes. Remove from muffin cups; serve warm. Makes 18 muffins.
