Marmalade Glazed Sweet Potatoes
About 8 servings

Ingredients
5 or 6 large sweet potatoes, about 4 lb
The Glaze
1 cup firmly packed light brown sugar
1/2 cup honey
1/2 cup butter
1 tsp vanilla_extract
1/2 cup orange marmalade
Scrub potatoes and place in a large pot of water. Bring to a boil and cook until potatoes are just barely tender but still very firm, about 15 minutes. Cool and peel potatoes. Slice 1/2 inch thick and arrange in a single layer in an 8 to 9 inch buttered baking dish.
In a saucepan heat honey,marmalade and butter until butter is melted.Add brown sugar and cook over medium heat until mixture bubbles, about 10 minutes.Remove from heat and add vanilla.Pour glaze over potatoes. Bake the potatoes on 375 degrees for aboaut 40 minutes, until tender. Baste the potatoes at least once during cooking with the glaze

Sweet Potatoe Pie
Yield: 6 to 8 servings
2 cups peeled, cooked sweet potatoes
1 1/4 cups sugar
1/2 stick melted butter
2 eggs
1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
9-inch unbaked pie crust
3 egg whites
Preheat the oven to 350ºF.
For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35-45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.
For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10-12 minutes, or until delicately browned. Cool and serve.

Sweet Potato Biscuits
Yield: 15 to 18 biscuits
1 1/4 cups all-purpose flour
2 heaping tablespoons sugar
4 teaspoons baking powder
1/2 teaspoon salt
3/4 cup mashed cooked sweet potatoes
1/4 cup (1/2 stick) softened butter
2 to 4 tablespoons milk (depending on the moisture of the potatoes)
Preheat the oven to 450 degrees F.
Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)
Top biscuits with Honey Butter!
Honey Butter
1 stick butter, softened
1/3 to 1/2 cup honey
Shredded orange zest
Mixed nuts(optional)
Mix a stick of butter with honey in a medium sized bowl. Add orange zest and mixed nuts, to taste. Mix again and serve.

Sweet Potato Cookies
1/4 C milk
2 C sifted all purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 C margarine
1/4 C sugar
1 egg
1 tsp ground cinnamon
1/2 C honey
1 C peeled, shredded sweet potato
1/2 tsp baking soda
1. Preheat oven to 350 degrees.
2. Combine sugar and margarine. Blend in egg, honey, and sweet potato.
3. Sift together flour, baking soda, baking powder, salt, and cinnamon. Blend in margarine mixture and milk.
4. Drop from tsp 2 in. apart onto greased cookie sheets. Bake for 15 - 20 min. till brown.
Delicious with cream cheese icing.
Makes 18 cookies.

sweet potato dauphinoise.
layer thinly sliced sweet potatoes in a casserole dish, pour over some double cream mixed with chopped garlic, salt and pepper then bake in a hot oven until baked through. Nice with some cheese mixed into the cream, and also you could add some curry powder into the cream.

A large can or 2 large fresh sweet potatoes peeled and cooked then put them in a shallow baking dish preheat oven to 325 and add on samll can undiluted orange juice sprinke with nutmeg, allspice, cinnamon and sugar add 2 tablespoons butter toss and bake for 30 to 45 mintues or untill warmed thru.

They are very good as fried chips, served with sour cream + sweet chilli sauce.
Also try as served with a roast dinner or as an alternative to normal mashed potatoes.

Boil whole potatoes in a large pot with lots of water. When almost done, peel them (rinse in cold water so you don't burn yourself) and chop up into a well buttered casserole. Sprinkle with brown sugar and bits of butter, if you have a lot of potatoes, do this in layers. Bake until bubbly and brown.

Melt a stick of butter in a frying pan,add sliced sweet potatoes ,salt,and sprinkle sugar on top of them.Let brown, turn over,sprinkle sugar on top,fry until tender.Yummy!
Mix olive oil and sugar ( you want it pretty sweet ) brush on sliced sweet potatoes and grill.
