When you cook green vegetables the green colouring known as chlorophyll escapes through pores due to high temperatures. The longer you cook your broccoli the more green colouring you lose, much in the same way as you lose water soluble vitamins B and C if you cook them for too long. Boiling speeds up this process as the water is in direct contact with the vegetable. Try placing your broccoli in a microwaveable container, add two tablespoons of water and some salt to taste, cover with cling film and cook on full power for six minutes for a 900 watt microwave oven. It'll retain all it's natural "green-ness" and nutrients.

When you buy your broccoli be carefull And only buy
the ones dark green with no yellow on it And it should be
cooked as soon as possible after buying it as it doesn't
keep well Take care not to over cook just cook until barley

Two Reasons!
Firstly because you're not putting it in boiling water, there was an old saying, root vegatables should be cooked from cold water, vegetables above the ground should be put straight in boiling water, and secondly because you are over cooking it, Broccoli ideally should only be blanched so it is crispy to the bite.

It may be a little too old, or (more likely) you're cooking the death out of it. Steam it (preferably over a colander) for only as long as is required to soften it slightly (it should still be slightly crunchy to the bite). It'll still be cooked, be a lovely green, and retain all the vitamins and goodness. Incidentally, the leftover water is excellent as a base for stock, or in the pan to start gravy off.

Broccoli changes colour if you cover it while it's being cooked. You should never put a lid on cooking broccoli.

It means it has been cooked for too long. Don't over cook vegetables as it takes all of the goodness out of them.

its probably because its being cooked to long or it might be because you are cooking it with a lid on the sauce pan as this makes broccoli loose its colour..... don't know why it does this though......hope this helps Amy x

over cooking - try steaming for about 3 mins once the water starts to boil - all the nutrients are lost if it is over cooked
