Well I sell this stuff to my customers. There are actually quite a few types of pectin in fact. One type is made from apple pomace the other from citrus fruit pomace (the stuff left after juice is extraced).
The main type of pectin will only set at a sugar strength of 60 - 65%. Which is why most jams have this amont of sugar in them (go look at the label!)
Special pectin types are used for lower sugar jams, and "dessert jellies". Very special types of pectin can be added to milk and then fruit juices added - and the milk will not split. Have a look on the label of these smoothie style products and you will se pectin - thatr is why it is there.
Also used in toffee sauces for ice cream, confectionery pectin jellys (using yet another special type!) etc. It is a very useful ingredient!

Pectin is used in jam making In soft fruits there is not much natural pectin in the fruit ,so it helps in the setting of the jam Freshly squeezed lemon juice can be used as an alternative .

You use it to make jams and jellies with fruit that does not have a high enough natural pectin content, for example pears or peaches. You can add pectin that you buy in a store in jars or you can just add apples to your jam recipe.

Pectin is a heterogeneous grouping of acidic structural polysaccharides, found in fruit and vegetables and mainly prepared from 'waste' citrus peel and apple pomace.
Pectin has only been produced industrially since early in the 20th century, but has long been used by housewives for gelling jams.
Pectins are mainly used as :
Gelling agents, but can also act as thickener, water binder and stabilizer.
Today, it is used in such diverse applications as yogurt, confectionery and acid milk drinks.
It has the image of a natural product and has acknowledged nutritional benefits.
For all those reasons, new uses are constantly found for Pectin in the food industry, and also in pharmaceutical and cosmetic applications.
Pectin is used as an oral demulcent to alleviate symptoms of sore throat and mouth in some throat lozenges. It is used in cancer treatment also.

You would use pectin in making jelly or preserves to give it texture. Pectin is used generally in fruits to make them "set". It's made from apples.
