I think they ate whatever they could all year round - it was more a case of survival than a case of choosing what they'd like for dinner. It would be more to do with what was in season. I know they ate bullrushes for carbohydate and I think meat was the staple. They ate the marrow from the bones for their fatty high energy value, fruit they could collect and primative versions of root vegetables (remember, potatoes definately hadn't arrived!)

I have read that, in former times, the Eskimo people ate only meat in the winter, but they did not eat only the muscle meat. They ate every part of the animal and therefore did not necessarily require veggies.
