Because purity begets purity. Mary was ever-virgin, so even after the birth of Jesus and for the remainder of her life, she was chaste (as was St. Joseph for their married life). It also wasn't just sexual purity. Her Immaculate Conception means that she was without the stain of sin for her entire life. She had to be a virgin for the same reason she had to be sinless. The body that would bear the Christ had to be pure and unused by man. It won't make sense to non-believers because it is a dogma of our faith which we believe was divinely revealed by the Holy Spirit.
I disagree with one respondent who said that our faith views sex as impure or dirty. On the contrary, John Paul II's Theology of the Body views the sexual union of man and wife as glorious! Catholics hold sex between a husband and wife to higher standard, that's all.

Because somewhere in the murky depths of Christianity lies a severe sexophobia: Sex is 'impure' and the only one 'pure' enough to have conceived Jesus would have to be one who had never had sex.
I think a lot of the sexual perversion that exists among (a small percent of) believers traces directly back to that concept.
Song of Solomon notwithstanding, of course.

Because it would be a great shame, according to Jewish rules of that time, if she was not a virgin when she got married, and worse would be that she was pregnant before marriage. So a pregnant unmarried virgin is a miracle, while a pregnant, unmarried ex virgin is a shame.

Stupid little idea about sex being dirty.
Sad that the christian bible takes Gods chosen method of procreation and twists it into something to be ashamed of.
Like God could not have put a Jesus sperm into one of Josephs testicles and made it a sprinter.
