Ingredients & Directions
Meatballs:
1 1/2 lb Ground beef
1/4 c Chopped onions
1/2 c Bread crumbs
2 Eggs
1 tb Chili powder
1 ts Worcestershire sauce
Salt to taste Pepper to taste
1 cn 18 ounce spaghetti sauce
Casserole:
4 Onions, sliced in rings
3 tb Butter or vegetable oil
1/2 c Dark brown sugar
1/4 c Molasses
1 tb Dry hot mustard
1 cn 28 oz. beans with pork
1 cn 28 oz.kidney beans,drained
1 cn 18 oz. lima beans, drained
Preheat broiler. Combine the first eight ingredients; form into meatballs. Place on a cookie sheet; broil to brown. Remove from oven. Reduce heat to 350øF. Pour spaghetti sauce into a saucepan. Using a slotted spoon, transfer meat balls to the spaghetti sauce; simmer for 15 minutes. Meanwhile, in a large fry pan, saute sliced onions in butter until translucent. Add brown sugar, molasses and mustard; heat until sugar is dissolved. In a large shallow casserole dish, combine beans and onion mixture. Place meatball mixture on top. Cover and bake for 1 hour or until bubbling all over.

Good heavens... that's going back a few centuries...!!!
Hadn't heard that recipe named in a heck of a long time!
It's a recipe that goes waaaaaaaaaay back, and has many variations...
Basically it's a roast or poached meat (any kind...from chicken to goat, to corned beef brisket to duck).
This is than cut into small chunks and marinated in a red wine vinegar sauce. (see below).
After you've prepared the marinade, chop up whatever veggies you have on hand that would go well in a salad... for example:
Green beans, lettuce (1 or 2 different types), beetroots, hard boiled eggs, tomatoes, anchovy fillets or pickled herring, onions, green onions, and anything else you'd like or have on hand...
A few raisins and sliced almonds would also be nice...and acceptable
Also fresh herbs such as chives, parsley, chervil, etc.
Marinate the cooked meat in the following sauce:
juice and zest of 1 orange and 1 lemon
a small glass (60.ml.) of red wine vinegar,
a large glass (200 ml.)of vifgin olive oil
salt and ground pepper to taste...
Whisk until well mixed and pour sauce over the meat.
Lleave at least an hour... turning the chunks once or twice, to make sure they are well covered in the marinade...
Cut up all your vegetables to your own taste place inra good sized salad bowl,
Halve the eggs, slice or dice the beetroot, if you use cherry tomates, halve them, or quarter normal ones.
Place all your veggies in a salad bowl, starting with the lettuce on the bottom, and finishing with the eggs, tomatoes & beetroot, with the herbs on top. Add the meat on top of this, pour the marinade sauce over it, and serve.
Serve with a good red wine and baguette bread.

SALMAGUNDI BAKE
3/4 c. uncooked long grained rice
1 1/2 tsp. salt
Pepper
2 (8 oz.) cans tomato sauce
1 c. hot water
1 c. chopped onions
1/2 c. chopped green peppers
1 lb. ground beef
1 tsp. salt
1 (12 oz.) can whole kernel corn, drained
2-3 tsp. chili powder
4 slices bacon
In ungreased 2 quart casserole. Layer rice. Sprinkle with 1 1/2 teaspoon salt and pepper. Pour over 1 can tomato sauce and hot water. Add a layer of onion, green pepper, then add layer of ground beef. Sprinkle with 1 teaspoon salt. Top with layer of corn. Add chili powder to remaining can of tomato sauce. Pour over corn. Top with bacon slices. Cover and bake at 375 degrees for 1 hour, uncover and bake 15 minutes longer. Garnish with tomato slices, green pepper rings and crisp bacon curls. Serves 6.
