There are many many ways. Here's a very simple one to impress your friends:

Shuffle a pack of cards, holding the cards at 90 degress to the ground, so you can see the bottom card (without being obvious). When you stop shuffling, remember what the bottom card was. Get your friend to pick any card at random, show it aorund etc. Get them to put it back on top, and cut the deck anywhere they like, so their card is in the middle of the deck. The card you saw at the bottom is now directly on top of their card. Shuffle the deck (it's very unlikely the cards will get seperated unless you are unlucky, or shuffle for ages). Look through the deck (either by turning over card by card or just fanning them out), and you'll know which card theirs is by it being next to the one you remembered! Unless they've seen it before, they'll be amazed.

Other methods which are used include 'false carding'. A bloke in my year at school (who was National Young Magician of the year) could pick up two cards off the top of the deck, rather than one, whenever he wanted. So you'd put your card back on top, he'd shuffle the deck, and then show you 'the top card' to show that yours wasn't there any more (although he was really showing you the second card, with the first card behind it, but you enver knew that). He'd then put the deck down on the table, click his fingers over it, turn over the top card, and hey presto your card had jumped to the top!

loads of different ways, false shuffles, holding a break in the deck, forcing a card. Hundreds of ways but I'm not telling how they're done :)

A slight bend in the card that the 'chosen' card is put on. Then viewing the pack from the side, it can be found.

Soooo hope you get an answer to this.
I don't think magicians like to give up their secrets.
I adore magic shows, can never see how anything is actually done though.
Guess that's why its magic.

They put a unique mark on each card in the deck and when you pick one, they can easily find it
