I love using gouache! You can use water to renew it once it is hardened. It is like watercolors, only opaque. I like to use a small plate to put my goauche colors on, so I use that as my palatte, and then I just dip my brush in a small cup of water and paint the water on the dried gouache, and paint away. I use this plate palatte with the dried paint on it over and over again.
For me, I like to use gouache paints in my calligraphy pen, and I can get really awesome blending effects by alternating colors without rinsing out the pen nib. I use gouache on watercolor paper. I use it to make samples of murals I'll create, or I make my own cards or postcards. Its not waterproof after it dries, so careful if you're trying to preserve your artwork. I think you can spray it with a fixative, but unsure about that.

Also be careful what you paint on as it can crack. Watercolour paper is probably best.
