Its really not so hard to tell, and usually I'm right (although I'll admit not always).
The thing that every guy I know does is we rule out too many women too quickly (we think highly of ourselves and like to think of ourselves as having very high and exacting standards), but give us time (and this can be a lot) and sometimes we'll change our minds.
For the snap judgment, I'll ask -- does this girl have her life together, is this girl fairly well educated, does she have a good job, is she in good shape, does she present herself well, is she fun and interesting and going to expose me to new things, does she play music or paint or something like that, does she dress well etc.
For the later judgment, the consideration is how "compatible" we are. I realize this may sound open-ended and unclear, but its the truth -- it has to do with the general feeling we have towards someone. "When Harry Met Sally" is right, typically women that a guy can be friends with he's "interested in."

I seem to know by the first date whether or not I'm interested in anything long term. Doesn't mean I stop seeing the girl though. I believe in seeing things through and getting to know people better before I stop dating that person.

Usually I know I am not interested when I flirt with her and the conversation is just not interesting or she doesn't show interest in me. However, by the first date I usually know if there is something there or not.

I think I'd know on the first date. It depends what u r after. Something serious or a fling.
Either way I think by the first date I'd know where I stood.
