Creamy Seafood Noodles

"Hey, seafood lovers! This is a delicious dish for you. It includes scallops, shrimp and imitation crabmeat along with mushrooms, garlic and onions. They're all mixed together with noodles in a creamy sauce. If you want, you could spice it up by adding a chopped jalapeno pepper."

INGREDIENTS:
1 large onion, diced
3 cloves garlic, minced
1 cup fresh sliced mushrooms
1/2 pound uncooked scallops
3 cups water
2 (3 ounce) packages Oriental flavored ramen noodles
2 (3 ounce) packages shrimp flavored ramen noodles
2 tablespoons sour cream
salt and pepper to taste
1/2 pound cooked medium shrimp
1/2 pound imitation crabmeat
DIRECTIONS:
Saute the onions and garlic in a lightly oiled or buttered skillet over medium heat, for 5 minutes or until tender. Add the mushrooms and scallops and saute for 2 more minutes. Remove from heat and set aside. (Note: Be sure to not to overcook the scallops.)
In a large saucepan over high heat, bring the water to a boil. Add the ramen noodles and boil for 3 minutes, reducing heat as necessary. Stir in the soup flavor packets, sour cream and the reserved scallop mixture. Season with salt and pepper to taste, reduce heat to low and let simmer for 5 minutes.
Add the cooked shrimp and the crab, allow to heat through and serve.

INGREDIENTS:
1 (6.75 ounce) package dried rice vermicelli
3 cups ketchup
1/2 cup soy sauce
3 tablespoons lime juice
2 teaspoons white sugar
1 teaspoon curry powder
2 teaspoons smooth peanut butter
hot chile paste (optional)
1 tablespoon vegetable oil
2 skinless, boneless chicken breast halves - diced
1/2 pound shrimp, peeled and deveined
4 cups bean sprouts
2 green bell peppers, sliced
2 eggs, beaten
1 cup chopped green onions
1 tablespoon chopped unsalted peanuts
DIRECTIONS:
Soak rice noodles in warm water for 20 minutes. Drain, and set aside.
In a medium bowl, stir together the ketchup, soy sauce, lime juice, sugar, curry powder, peanut butter and chile paste. Set aside.
Heat oil in a wok or large skillet over medium-high heat. Add chicken, and cook for about 5 minutes, or until juices run clear. Add the green peppers, and saute for a minute. Move the chicken and pepper to one side of the pan, and pour in the eggs. Cook eggs, stirring constantly until firm and scrambled, stir in the chicken and peppers. Add shrimp and pour in 1/4 of the ketchup mixture along with bean sprouts and noodles. Mix and cook for a few minutes until shrimp are pink. Add the remaining sauce, and cook until heated through. Garnish with green onions and chopped peanuts, and serve.

After the shrimp are cleaned, get a skillet, and spray it with pam. Pop some minute rice in the microwave. Take the shimp put them in a baggie, and add some cajun seasoning. Shake well. Once the skillet is hot, throw in shrimp let them fry for about a minute. Then throw in some butter and fresh garlic. If you want, after the shrimp are cooked...(do not over cook!) (3-4 minutes tops) Then throw some mushrooms, thin sliced zucchinni and green onions, cilantro and peppers. Sautee for a few minutes.
Take rice, sprinkle with saffron, or a bit of cumin and pepper, throw veggies, put shrimp on top, take juice and drizzle. Garnish. Serve with a light beverage, follow with frozen strawberries, or key lime pie.

Don't kid yourself - seafood is high in natural sugar, and is no healthier for you than meat. The only exception would be oily fish (such as herring, mackerel or salmon) which, providing it's wild, is full of useful Omega 3 oils. You need to loosen up a little and eat more different kinds of things. Unless you have a religious objection to chicken and pork, in which case, too bad. How about an omelette? Healthy and delicious. It has been established that the cholesterol in eggs does not enter the human bloodstream and clog up the arteries, so any worries you have about cholesterol can go out the window. Eggs are cheap (although you should get free range organic ones if possible) and if you grate a little good cheese into the omelette, or add a handful of chopped fresh herbs such as flat leaf parsley, chervil, coriander (cilantro to Yanks), thyme leaf and/or sage, you have a fabulously tasty, high-protein, low-carb meal. It also takes about four minutes to cook a three-egg omelette, so it's quick. Why do you eat beef but not chicken or pork? Chicken's better for you and pork is more interesting. I personally like beef, but I don't eat it very often.

FRIED SHRIMP AND ONION RINGS
1/3 cup flour
1/3 cup Martha White's Buttermilk Cornbread Mix
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon each garlic and onion powder
seltzer water, enough to make medium thin batter
Shell-on Shrimp to fry
oil for deep frying
Heat oil to 365 degrees. After oil comes up to appoximately the correct temperature, test it by frying one shrimp. One shrimp should take about 2-3 minutes to be golden brown. Adjust heat accordingly.
Prepare batter by stirring all the dry ingredients together until mixed well. Add the seltzer water in a thin stream in the center, mixing with a whisk to avoid lumps. Stir until smooth but do not overbeat. The batter should be similar in consistency to pancake batter.
If you have a tendency to make tough tempura, use cake flour instead of all-purpose flour.
Dip the shrimp in the batter, drain for 10 seconds and drop in hot oil. Remove when golden brown, season to taste, drain on paper towels, and serve with cocktail sauce or tartar sauce for dipping.
You can use this same batter to make great onion rings with vidalia onions sliced 1/2 inch thick. Sprinkle with onion powder before they cool.
If you can't find the Corn Meal Mix at your store, substitute fine corn meal (1/3 cup), 2 tablespoons of dry buttermilk powder, and a half teaspoon baking powder and continue to use the other ingredients listed above.

Simple Shrimp Stir Fry
Ingredients:
1 pound large Shrimp
1/2 Garlic bulb
1 sweet Red Pepper, deribbed, julienned
2 Green Onions, green part only, julienned
1 tsp Lemon Juice
Directions:
Peel and devein shrimp. Rinse and pat dry with paper towel. Heat garlic in large fry pan until soft. Add shrimp and red pepper and stir-fry over medium heat about 5 minutes or until shrimp is cooked. Stir in green onion and lemon juice. Serve shrimp stir fy with steamed rice.

Shrimp Alfredo
get you some garlic butter
shrimp and a spatula
melt your garlic butter in a sautee pan or whatever pan really and then throw your shrimp in a cook it stiring constantly and then while this is cooking cook your up some pasta and when it is done mix with some alfredo sauce and mix all together if yuor going to impress him put the pasta and sauce on a saucer and plate the shrimp on top and garnish with fresh salantro and enjoy

Slice thin your choice of veggies (peppers,green onion and summer squash is nice)-saute with EVOO in pan until tender-add minced garlic to taste-add cleaned shrimp,cook until pink-serve over your favorite cooked pasta.
