Haleem
Haleem originated in Iran and Afghanistan area, and brought to India during the Moghul empire. Nowadays, it is almost a must on Moslem holidays. It is basically a meat and grain stew. You can use lamb, beef, mutton or even chicken. The cereals used are whole wheat grains, cracked wheat, garbanzo beans, or even lentils. The garnishing and accompaniments are as important as the dish itself because of its association with holidays.
This version is made in the pressure cooker to speed up the cooking time.GOOD Luck.
Ingredients
1. Cracked Wheat: 2 Cups
2. Ghee (Clarified butter): ½ cup
3. Boneless Lamb cubed about 1" pieces: 2 Pounds
4. Finely chopped onions: 2 cups
5. Salt: 1 teaspoon
6. Ground Lal Mirch (Cayenne Pepper): 2 teaspoons
7. Finely chopped ginger: 1 Inch (1 Tablespoon)
8. Minced Garlic: 2 Tablespoons
9. Turmeric Powder: ¾ teaspoon
10. Coriander Powder: 1 Tablespoon
11. Cumin Powder: 2 Tablespoons
12. Cinnamon stick: About 1 of 1" long broken up in tiny pieces
13. Whole Cloves: 6
14. Bay Leaf: 2
15. Black Cardamom pods: 2
12. Canned Garbanzo beans drained and rinsed: 2 cup
18. Degi Mirch (Paprika): 2 teaspoons
13. Water
Garnishing
1. Ghee: ¼ Cups
2. Onions Thinly sliced: 1 cup
3. Fresh peppermint leaves chopped: ¼ cup
4. Fresh Cilantro chopped: ¼ cup
Accompaniment
1. Sliced Tomatoes: 1
2. Sliced Cucumbers: 1
3. Thinly sliced red Onions: 1 Large
4. Fresh Serrano peppers chopped: 4
5. Ginger finely chopped: 1 Inch
6. Lemons, quartered lengthwise: 4
7. Salt: ¼ teaspoon
8. Cayenne pepper: ¼ teaspoon
9. Lemon juice: 2 Tablespoon
Method
1. Pre-soak cracked wheat for 2 hours. drain. Add to pressure cooker
2. In a heavy pot, heat oil. Add lamb continue frying till all the beef is brown. With a slotted spoon, remove the lamb and add to pressure cooker. Add onions, salt, cayenne pepper to the hot Ghee. Sauté till onions are clear and the edges start to turn brown.
3. Add garlic, and ginger. Sauté about 2 minutes.
4. Add Turmeric, cumin, coriander. Sauté about 30 seconds to one minute.
5. Transfer the contents of the sauté pan to the pressure cooker. We are no done with the sauté pan for the main recipe.
6. Add remaining ingredients to the pressure cooker. Add water to top the contents by about 1".
7. Lock in the lid. Turn on heat till the pressure cooker reaches 15PSI. Cook for 17 minutes. Turn off heat. Let the pressure drop naturally.
Garnishing
Heat a pan with Ghee. Add Onions. cook on high heat till the onions are brown caramelized. Remove onions and put them on a paper towel to absorb ghee.
Put Haleem in a serving dish. Sprinkle caramelized onions, fresh peppermint leaves and cilantro leaves.

200gms wheat(whole)
300gms boneless mutton
20gms fresh green chilliies
2' pieces ginger
6-8 flakes garlic
100gms coocking oil
3 medium onion sliced
2 medium lime
1/2 turmeric powder
2tbs garam masala
`~ salt to taste
Method :
De-bran the wheat, wash and soak for 2 hours.
Clean and marinate mutton with half of ground paste of ginger, garlic, green chillies and salt for 1 hour.
Pressure cook the soaked wheat and marinated meat for about 45 minutes. Mince and grind to a fine paste.
In a Pan heat oil, add the finely sliced onions, fry till brown, add the spices.
Add the ground paste and keep stirring occasionally. On slow flame, till the mixture leaves the sides of the pan. Adjust the seasoning. Serve hot, with lime wedges coriander and fried onions as garnish.
