For some reason, when I read your question, I thought of Tony Shaloub (plays "Monk" - USA network). In a commercial with Anthony Michael Hall and the new "Psych" actor, Tony is counting the corn kernels on his plate.
I always watch "Monk", and I'm reminded of myself with every episode. Though I don't count food items on my plate, I count many things.
I love potatoes - but if I eat them "scalloped", I gag (probably psychological).
Of course a sandwich must be assembled in a certain way, but if you're going to butter toast, the butter has to make its way out to the edges of the bread - not a small dab smeared in the middle.
I like pancakes with peanut butter and syrup - otherwise, I prefer waffles.
When I chop onions, etc., I chop with the right hand, and pick them up methodically with the left to toss them in the bowl. I don't know why I don't just set the knife down and then scoop the whole thing into the bowl (time consuming?).
I love corn-on-the-cob, but I despise creamed corn.
I place my fried eggs on top of my hashed browns.
I guess I'd better quit now...

I have weird quirks with my food as well and it drives my husband crazy as well. I also am extremely fussy about how my sandwich is assembled and how I eat pancakes. The list goes on and on. I just means that I am usually the one to cook in the house and put together the picnic lunches.

I use to not like my food to touch, but I've kinda gotten over that in the last year or two. I have a quirk with corn, I like to cook canned corn with butter and pepper, but I cook it until it's dried out.

I have a friend that will eat only one food at a time - for instance - if she was served a plate of corn, peas, meatloaf and a roll. She would eat all of the corn until it was gone, and then eat all of the peas until there were gone, etc. She will not go onto the next food until she has eaten all of one kind first.

Not really. I'll eat most anything I can get my hands on. The only food I wont eat is kiwi fruit itself. Ithink most picky eaters have never been truly hungry.

my brother eats one item at a time, then he turns his plate clockwise to eat the next item on his plate, he never eats anything together or one bite of one thing and the next of something else. And I cant eat hamburgers without eating it layer for layer, first the bread, then the tomatoe, lettuce, cheese, onion, beef, and bread.

I like "crunch factor" in my foods. Toasted toast, celery or water chestnuts in my tuna salad, crunchy peanut butter, preserves rather than jam, whole grain bread. Drives my kids crazy!

I don't like my food to touch, for example my mashed potatoes must not touch my turkey and my veggies must not touch my steak etc. etc.
