I didn't think you could eat blue heron, I thought it was an endangered species! But,.... I guess you would cook it the same as a wild goose or Canada goose. Cut the breast off and marinate it overnight in red wine. If you don't have red wine, you could use pepsi or doctor pepper. After you have marinated it sufficiently, take it out of the marinade liquid and discard the liquid. Cook slowly on top of the stove with tomatoes, onions carrots, garlic, olive oil or vegetable oil, salt, pepper and other seasonings you might want to add, cook slowly, simmering over med-low heat, adding liquid as necessary. Dispose of the evidence before someone reports it! How did you come across killing a blue heron anyhow???? Accidental, I hope!

the same way you would cook a white heron or a great snowy egret. if you want the meat to fall off the bone there are a couple of ways to go about getting there. you can soak the bird in a vinegar based solution (with a few of your favorite herbs and spices) or you can boil the bird for a while prior to cooking it in the manner you choose. and the key to preparing any bird is cook it s l o w l y and marinate liberally. I don't mean just a little slower than normal, I mean cook that thing until the neighbors have smelled it so much they think they actually tasted it!!
