heat some olive oil, put chicken in battered eggs, dip in bread crumbs, season to taste, put in hot pan, cook both sides, then pour a jar of marinara sauce over chicken , cook for about 30 over low heat, spread some mozzarella and parm cheese over it, and put over hot spagetti..cant go wrong, my 2 yr old loves it. experiment w a few ways of making, you might like the chicken crispier, more sauce , more cheese or less of them, as long as your taste buds are happy..

Easy Chicken Parmesan

INGREDIENTS:
4 boneless chicken breasts, pounded to 1/2 inch thickness
1 egg
1/2 cup milk
seasoned bread crumbs
8 slices mozzarella cheese, or more
1 jar (16 oz) spaghetti sauce
Parmesan cheese

Whisk together the egg and milk. Dip the chicken breasts in milk and egg mixture and then in bread crumbs. In a skillet with a little olive oil over medium-high heat, brown on both sides until golden.
Set chicken in a baking dish.
Slice 8 pieces of mozzarella cheese and put two on each chicken breast. Pour 1 jar of your favorite spaghetti sauce over all. Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly.

this recipe is my mother-in-law's and it's a knockout. it's baked, but it tastes like fried chicken... and it's pretty healthy!

ingredients:

- 1 quart of buttermilk (reduced fat)
- salt/pepper
- Spike seasoning
- olive oil
- breadcrumbs (flavor of your choice)
- 2 eggs
- grated parmesan (add some shredded too if you'd like)
- boneless, skinless chicken breasts or thighs

in a large mixing bowl, add buttermilk, generous amount of salt/pepper/spike seasoning and stir together. put the chicken in the buttermilk mixture, cover with saran wrap and place in the fridge to marinade overnight.

mix the breadcrumbs, parmesan in a large ziploc bag. beat the eggs. dip the chicken pieces (one at a time) into the egg, then place in the ziploc bag and shake to coat the chicken with the breadcrumb mixture. spray a casserole/baking dish with some olive oil and place the chicken in the baking dish. once all the pieces are coated, drizzle some more olive oil over them and bake in the oven at about 400 degrees for approx. 20-30 minutes (until browned and juices run clear).
