It's been bugging me for a while and I want to know who was the founder of cottage cheese and what would possess him or her to eat it?

Cottage cheese has been called Dutch cheese, which gives some indication of where it might have originated. At any rate, it would have been where there are cows, probably one or a few per cottage, and no refrigeration. I would imagine people ate the curds and whey, didn't become sick, and continued from there.
