First of all why would there be food out for 7 hours?

Ok you have a few options and can remain relatively safe. Canned tuna for tuna salad sands will last that long, yes some people may mention mayonnaise will not be safe, but this is a shelf stable item and can be stored at room temperature.

You can make a relish or vegetable tray with pickles, olives, radishes etc.

Cakes, fruit pies, brownies all work well for that amount of time.

You can also make small amounts of cold cuts, cheeses and breads for mini sandwiches that can be consumed within 4 hours and still be safe.

I hope this helps you.

Commercially made mayo is made with pasteurized eggs, therefor it will last. Go to a food service supply and check out the 30lb cartons, it is packed in plastic bags and tied with a twist tie not sealed air tight. Mayo is a shelf staple item. Now that being said if you make your own mayo I would store it in the frig.

Rice crispies
Chips and salsa
Home made pretzels

Mayonaise is made from eggs. It certainly is not shelf safe when exposed to the air. The reason unopened mayonaise can remain on the shelf is because the container and contents have been disinfected (usually by irradiation). Once you open the container, it's exposed to bacteria. Not to mention that the tuna, chicken, or ham you're mixing the mayo with will also go bad. Your advice is horrible. That could kill someone.

Trail Mix or like a Chex Mix is always good. Or, brownies or a fruit bar dessert type thing, like lemon squares are always good. If you're looking for something premade then maybe buy some mini muffins or cupcakes from a local supermarket or bakery.

Citric fruits like oranges, limes and lemons are too acidic to spoil if left out.

Honey is too sweet to spoil, even if left out for hours.

If you add some lemon to hummus it keeps for quite a while. Make sure to taste it though!
