This idea has a kernel of truth to it. Carrots are high in vitamin A (specifically beta carotene), which is necessary for optimal visual health. Deficiency in vitamin A (uncommon except in third world countries) causes night blindness, corneal degeneration, and drying out of the conjunctival membrane that covers the eye. Administering megadoses of vitamin A to at risk children prevents these problems from developing.
