Chocolate chip cookies (the premade kind) when our oven wasn't working. Just slice them a bit thicker than usual and put the rack on the lowest position, away from the upper elements.
That way, they won't end up as little chocolate chip hockey pucks.

TOASTER OVEN SOFT OATMEAL RAISIN
COOKIES
2 1/2 cups of Quaker Oats (quick or old fashioned, uncooked)
1 cup flour
2 eggs
1/2 teaspoon salt
1 cup butter
1 teaspoon vanilla
1 cup brown sugar
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins
Mix the salt, butter, vanilla, and brown sugar in a big bowl. Add the sugar, baking soda, eggs and ground cinnamon until fully mixed. Stir in the flour, mixing thoroughly. Stir in the Quaker Oats until you see no flour. Mix in the raisins.Drop by large rounded spoonfulls onto a ungreased cookie sheets (about six per batch). Press the cookies down to make them flat before baking.
Bake in a preheated 350°F for 20 Minutes or until brown at the top. Ovens may vary, (I used a toaster oven) but these can be made as well in a regular oven. They will cook in less time in a regular oven so watch them (check them at the 10 minute mark).

I'm male, 53, chief cook for 33 years of marriage.
Untill three years ago I never used anything but a conventional
oven. Bought my first toaster oven & have since gotten rid of the
conventional. I've found that with accurate timing & temp; ANYTHING (of limited size) can be cooked in a toaster oven.
Another plus to toaster ovens: You don't need to heat up 6 cubic feet of space, (not to mention your entire kitchen) to cook a relatively
tiny sheet of cookies.

I have made cookies in something similar to a toaster oven. It will take a little longer, but it will work. Good luck!

Try this: Rum Chocolate Chip Cookies 2 packages Prepared Chocolate Chip cookie dough. Make the cookies according to the package and cool. 2 tablespoons of good rum. 1/2 cup of soft butter (not melted and not margarine or light butter) 1/2 cup of confectioners sugar 1/4 cup of unsweetened cocoa powder Sift the sugar and cocoa together. Add the soft butter. Blend well and add a tablespoon of rum until smooth. If the frosting is still stiff add a teaspoon a of milk. Use this frosting to either frost each cookie or make it a sandwich cookie with the frosting inbetween two cookies. You can change this around by changing the rum out for a different type of alcohol and changing the cookie to another type. Example: Sugar cookie with the rum/vanilla Sugar cookie with walnut favoring and bourbon Chocolate Chocolate Chip and Orange Gran Marnier (use a little food coloring to make the frosting a light orange.

If your toaster oven is of better quality, you're probably okay. But, I found with my smaller, cheaper model that biscuits and muffins turn out much better than cookies. The cookies were edible but not satisfactory.

lol...i sneaked and made it in a pizza oven before at work. I'm sure it will work... just put it at the right temp 350 or 325. and keep an eye on it, you don't want it to hot to cook the outside before cooking the inside. but i'm sure it will work :)

I have! Its quick, easy, and easy to clean. They come out just the some. You just need to set your temp at the right degrees and cookies at the right angle.
