don't get your water to hot - to much yeast- and yes you can use reg. flour NOT self rising- mix your yeast with some warm water in a glass with 1 teaspoon of sugar beforee mixing it all together - if it don't rise you know the water is to hot or no good - try again
are you letting it rise then punching it down befor you shape into bread or rolls
if you want you can e-mail me and i will send you a ez recipe for bread

I have long said that humans come equipped with the best possible bread machine on earth -- their fingers!
If you are having these problems with your bread, you may be using too much yeast and not allowing your dough to rise properly. I've had a lot of luck with a yeast from Hodgson's Mill brand, which is in my local grocery.
To help your yeast perform better, try adding a little sugar when you are letting it "bloom" on the warm water, before adding it to your flour. NEVER add honey to the blooming yeast, it has an antibacterial which kills yeast.
Your bread has to rise in a warm environment, away from any drafts. This does take time, and patience! It's hard to wait when you want that bread! Hope these tips help.
Good luck and happy baking!

If you're using a bread machine, you can use any all purpose flour the same goes for doing it by hand
I asked my husband who's the yeast baker here, mine also turned out like a rock or hockey puck, he says you have to knead it properly, folding in half towards you and then turn and fold in half towards you, you can also knead and turn it clockwise. Then let it rise to double its size.
If you overwork the dough you do something to the gluten in the flour. Also after you mixed the first yeast let that also rise to double before you add the flour.
It also helps if you have all the ingredients at room temperature.

If its heavy you are not giving it enough kneading or rise time.
