Here's an oldey but goody - and Easy...
"London Broil" - 4 servings
1 lb. high-quality beef flank steak
2 medium onions.; thinly sliced
1/4 teaspoon salt
1 tablespoon margarine or butter
2 tablespoons vegetable oil
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic; crushed
Cut both sides of beef steak into diamond pattern 1/8" deep. Cook and stir onions and 1/4 teaspoon salt in margarine until onions are tender; keep warm. Mix remaining ingredients; brush half of the mixture on beef.
Set oven control to broil and/or 550*. Broil beef with top 2-3" from heat until brown, about 5 minutes. Turn beef; brush with remaining oil mixture and broil 5 minutes longer.
Cut beef across grain at slanted angle into thin slices; serve with onions.
(This would be good served with a rice side dish.)

Salisbury steak- Make thick patties of lean ground beef, and cook them 1/2 way in a shallow baking dish in the toaster oven. Mix some beef gravy, either canned or bullion based, with thin sliced onions. Pour over the patties, just enough to cover. Cook until the meat is done. Season with fresh cracked pepper and serve with mashed potatoes and a vegetable. If yuor boyfreind likes mushrooms they are also good stirred into the gravy and cooked.

Mexican Casserole 1 pound lean ground beef, browned 1 can condensed cream of mushroom soup (10 3/4 ounces) 1 can condensed cream of chicken soup (10 3/4 ounces) 1 cup enchilada sauce, mild 1 cup milk 1 can (4 ounces) chopped green chile peppers 1 bag (medium) Doritos, crushed; save about 1/4 for topping salt and pepper to taste shredded Mexican blend cheese or Monterey Jack or Cheddar Mix together browned ground beef, soups, enchilada sauce, milk, chile peppers, and about 3/4 of the crushed Doritos. Top with remaining crushed Doritos and shredded cheese. Bake at 350° for 25 to 30 minutes, until hot and cheese is melted. Mexican Casserole Recipe serves 6.

Broiled Beef
2 pounds (900 g) London broil,
round steak or desired cut
8 ounces (225 g) whole mushrooms
1 large onion
Marinade (can be substituted with prepared marinade):
1 clove garlic, minced
1/2 cup (125 ml) soy sauce
2 tablespoons (30 ml) vegetable oil
1 tablespoon (15 ml) vinegar
2 tablespoons (30 ml) ketchup
1 teaspoon (5 ml) dried oregano
1 teaspoon (5 ml) ground black pepper
(Follow broiling instructions found in your user manual.) In a small bowl, mix garlic, soy sauce, oil, vinegar, ketchup, oregano, and black pepper. Pierce meat generously with a fork on both sides. Pour marinade over meat. Spray baking pan with nonstick spray coating; set aside. Peel and quarter onions, wash mushrooms and place in the prepared baking pan. Place broiling rack over vegetables in baking pan. Remove meat from marinade and place on rack. Set Temperature Control Knob to 500°F (260°C); set Function Knob to Broil. Broil for 15 to 18 minutes per side (depending on thickness). Makes 4 servings.
SWEET 'N' SPICY TIMEOUT TURNERS
1/4 c. slivered almonds
1/2 lb. ground chuck
1 sm. onion, minced
1 clove garlic, mashed
1/3 c. catsup
1/4 c. dark seedless raisins
1 tbsp. cider vinegar
3/4 tsp. cinnamon
1/2 tsp. salt
2 (8 oz.) cans refrigerated buttermilk biscuits
Sour cream or hot pepper sauce (optional)
Spread almonds on oven pan of toaster oven and brown at 350 degrees for 5 to 7 minutes or until lightly browned. Cool.
In a large skillet, over medium heat, saute beef with onion and garlic for 5 to 7 minutes or until meat loses its red color. Stir in catsup, raisins, vinegar, cinnamon, salt and almonds. Turn heat to low and simmer, uncovered, stirring constantly for about 5 minutes or until most of liquid evaporates. Flatten each biscuit with hands until it forms a 4-inch circle. Spoon a rounded tablespoon of meat mixture on one side of each biscuit. Fold over and press firmly with a fork to seal edges.In toaster oven preheated to 400 degrees, place 5 turnovers on lightly greased oven pan. Bake 15 to 20 minutes or until golden brown. Repeat with remaining turnovers. Serve warm with sour cream or pepper sauce. Makes 20 (4 inch) turnovers.
