One of my favorites is
DORITO DELIGHT
3 or 4 chicken breast cooked and cut up or shredded
1 bag of corn doritos(16 oz)
1 can cream of chicken
2 cans rotel
1 pound velvetta
Heat the cheese rotel and soup it melted add chicken. Spray a 13x9 pan and add half the chips crunch slightly. Pour chicken and cheese over chips. Crush the remaining chip into small peices and add to the top. Bake at 350 for 30-35 Mins or until the edges bubble. You could also stir in some vegies you like ( onions or celery)
I like this cause its quick and easy and I can cut the recipe and make a smaller version if needed.
About the other I would spread the cream of chicken across the top if you add water when the juices run out of the chicken your soup is just going to be watered down so there for not adding much flavor.

This seems similar to the dish you described - at least it'll be an addition to someone who' looking for easy chicken recipes...
"Chicken Hot Dish" - 4 servings
1 cup uncooked rice
1 can cream of chicken soup
1/4 cup Lipton's Onion Soup Mix
1 can milk
2 whole boneless chicken breasts; halved
salt and pepper
Combine first 4 ingredients; turn into 9x13" pan. Lay chicken pieces over the rice mixture; season with salt and pepper. Cover with foil; bake at 350* - 1 1/2 hours covered, than 1 hour uncovered.
"Quicky Chicky" - 4 servings
1/2 cup Parmesan cheese
2 tablespoons minced parsley
1 teaspoon dried oregano
1 clove garlic; minced
1/2 teaspoon pepper
2 whole chicken breasts; skinned
3 tablespoons butter; melted
Combine first 5 ingredients into shallow pan. Dip chicken in melted butter, then into the cheese mixture; place in shallow baking dish. Drizzle remaining butter over chicken and Bake at 375* - 25 minutes or until chicken is tender.
Here's a 'hamburger' recipe:
"Mini-Burger Pizzas" - (10 small)
1 lb. ground beef
1 (8oz.) can tomato sauce
1/3 cup chopped olives
1/4-1/2 teaspoons oregano leaves; crushed
1/4 teaspoon garlic salt
1 (10 oz.) can Hungry Jack Refrigerated Flaky Biscuits
4 oz. (1cup) shredded Mozzarella cheese
Preheat oven to 400*
In large skillet, brown beef; drain. Stir in next 4 ingredients; simmer while preparing crust: separate dough into 10 biscuits. Place on ungreased cookie sheets; press or roll each to a 4" circle. Spoon 1/3 cup mixture onto each biscuit; spread evenly. Top with cheese; Bake 10-12 minutes, until crusts are browned.
Hope these help your collection!

This is so easy and my family has loved it for years:
I cup rice
1 cup milk
1 can cr. of chicken soup
1 can cr. of mushroom soup
chicken breasts
1 package of dry onion soup mix
In a large baking dish, mix the rice, milk and both cans of soup. Lay the chicken on top and sprinkle the onion soup mix on top. Tightly cover with foil and bake in a 375 oven for about 90 minutes
Quick chicken and rice and it is delicious

My favorite is crock pot chicken. You buy a whole chicken, and if it's not thawed...then thaw it. Put it in the crock pot in the morning, salt, pepper, and poultry season it. Turn your crock pot on low, and leave it till dinner time. The chicken so so moist, and so good!!!!
