I see where you are coming from! Like, who was the person who found tobacco and tasted it and thought " That's disgusting! Perhaps if I burn it and inhale the smoke!"
Or the first person to taste raw cocoa ( which is vile beyond belief) and thought "perhaps if I mix it up with a little sugar and milk?"

I would imagine they noticed the calves drinking the milk, and figured it must be like human milk.
