For a healthy recipe just take skinless chicken breast and grill it with some seasonings like cumon for smoky flavers. Or cheyenne for spicyness. Then you can drizzle any sause you want on it that you think might taste good with the spice you chose to season the chicken with. Then take some spinach and saute it with some garlic and extra virgin olive oil. There you go!

Chicken Fettuccine with Pesto Cream Sauce:
Serves 4; prep time: 30 minutes; total time: 30 minutes
3 boneless, skinless chicken breast halves (6 to 8 ounces each)
Coarse salt and ground pepper
1 tablespoon olive oil
1/2 pound fettuccine
4 cubes frozen pesto (1/2 cup)
1/4 cup heavy cream
1. Place chicken breasts between two pieces of plastic wrap.With a meat mallet or heavy skillet, pound chicken to an even 3/4-inch thickness. Season with salt and pepper.
2. Heat the oil in a large nonstick skillet; cook the chicken until golden brown and cooked through, 3 to 4 minutes per side. Slice each piece across the grain into 4 or 5 strips; cover to keep warm.
3. Meanwhile, cook pasta according to package instructions. Reserve 1/4 cup cooking water. Drain pasta and return to pot.
4. In a small saucepan, heat pesto over low until liquefied. Stir in cream; heat until warm.Toss pasta with reserved cooking water and half the sauce. Divide among shallow bowls; top with chicken. Drizzle with remaining sauce.
Easy Chicken Parmesan. My sister absolutely loves it and I serve it with Angel Hair Pasta and garlic bread. Here it is:
1 jar (26 oz.) spaghetti sauce
6 Tbsp.100% Grated Parmesan Cheese, divided
6 small boneless skinless chicken breast halves (1-1/2 lb.)
1-1/2 cups Shredded Mozzarella Cheese
PREHEAT oven to 375°F. Pour sauce into 13x9-inch baking dish. Carefully stir in 4 Tbsp. (1/4 cup) of the Parmesan cheese. Add chicken; turn over to evenly coat both sides with sauce. Cover with foil.
BAKE 30 min. Uncover.
TOP with mozzarella cheese and remaining 2 Tbsp. Parmesan cheese; continue baking 5 min. or until chicken is cooked through and cheese is melted.
If you want to reduce the fat, use low fat Mozzarella instead.

Greek Chicken Breast
For one person you will need:
1 Whole Chicken breast (boneless)
1/4 Cup feta cheese (it's a greek type cheese you can use also gruere)
1/4 Cup green pepper chopped
1 Slice mozzarella cheese
Directions:
Grill the chicken breast until done. Put the mozzarella cheese on top of the chicken to melt (medium oven approx. 2 min). Then place feta cheese and peppers on top. Put in medium oven for 2 min. Serve with white rice.
I love chicken and my fave is apricot chicken get a dish put drum sticks or breasts in and get a can of apricots and a onion and but the can of apricots (make sure you keep the juice) on the chicken in the dish make sure the dish has a lid and cut up the onion and put that on top also and get Maggie chicken stock and mix that packet with the juice of the apricots. and then put lid on and cook.
Also i love chicken breasts and cream cheese and apricots. lay the chicken breasts down and but cream cheese and a apricot in the centre (if you don't like apricots leave out just as nice with cream cheese) and roll up and put tooth pick in to hold and cook in fry pan yummy.
also if you like bacon that is nice with chicken trust me yummy.
get chicken breasts and get bacon (i get from deli of supermarket) and rap around the chicken so nice and cook in fly pan. Hope this helps.
Rotel Chicken
It's one of our favorites!
6 Chicken Breasts
1/2 pound bacon
1 can rotel
1 can chicken broth
shredded cheese
Rice a Roni Spanish Rice
Brown bacon in a skillet. set aside. Don't over cook! Leave bacon grease in skillet, lightly sear the chicken on both sides.
Meanwhile brown Rice A Roni per package add chicken broth and 1/2 of of the rotel and the seasoning packett. Pour into Baking dish 8x12 or 9x13. Lay chicken breast on top, top with remainder of rotel, chop bacon and add to top of chicken. Cover with foil, bake 45 min. Remove cover add cheese, recover for 10 more min. Serve and enjoy.
CHICKEN PINEAPPLE SALAD
boil half kg skinless and bone less chicken and then put it in a mixing bowl and then add half cup of pine apple. Now add 5 spoons myonnese and 4 spoons cream.Sprinkle some sugar,some salt and finally sprinkle some black pepper. Toss it and mix it and then take a plate and put leuttece on it and then put all the salad on that leuttece and serve it. This dish is ready with in 15 minutes and really v tasty to eat
ENJOY!
I also like just put some ckicken with skin and put some lemon juice and garlic (minced) and bake it for about an hour. And its off the hook! Serve it with stuffing from stove top and.....yummy! ♥

Chicken Parmesan
Serves 6
1/3 Cup Parmesan cheese, grated
1/4 Tsp Italian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 Cup White Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup 2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Chicken Pasta Alfredo
Serves 6
6 Qts Water
12 oz Fettuccine Pasta
2 Tbsp Peanut Oil
6 (4 oz) Chicken Breast, boneless, skinless
2 (10-3/4 oz can) Cream of Mushroom Soup
1 (20 oz bag) Frozen Broccoli Florets
3/4 Cup Parmesan Cheese, grated
Instructions:
Heat a large pot of water, over high heat. When water comes to a boil add the pasta and boil for 8-10 minutes. Drain; reserving 2 cups pasta water. Cut the chicken into strips (1/4''x1''); set aside.
In a large frying pan, over medium-high heat, add the oil and chicken pieces stirring frequently until golden brown.
In a medium saucepan, over medium heat, add the chicken pieces, sauce, 1/4 cup reserved pasta water, stirring frequently. Add the remaining pasta water into the saucepan and bring just to a boil, then add the broccoli. Cook for 1-2 minutes. Remove from heat.
Divide the cooked pasta evenly between serving dishes and top with chicken and broccoli mixture.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

In a dutch oven (or large heavy pot) Brown the pieces on all sides in oil. Remove chicken and add 4 Tablespoons onion, 2 Tablespoons carrot, 2 tablespoons celery (all diced), When the onion has softened (become translucent add 1 clove garlic, minced, saute for just a moment, return chicken, add whole canned tomato to cover, cook in oven at 325 until tender. Serve with pasta.

Chicken and Stuffing Recipe
1 tbsp butter
4 boneless skinless chicken breasts
1 box chicken stuffing mix
1 can cream of chicken
1/2 cup of milk
1/2 cup shredded cheddar cheese
Heat butter in skillet. add chicken cook 12-15 minutes or until done. Remove chicken
cook stuffing according to pkg, except let stand for 2 minutes
Top with chicken, mix soup and milk. Pour over chicken. Sprinkle with cheese. Cover and heat through.
It may not be exactly healthy but its good and quick. Good luck!

Here's one of our "most requested" recipes. The Parmesan-potato mixture bakes up golden and crisp, sealing in the chicken's natural juices. It's as delicious as fried chicken--but with a lot less fuss.
2/3 cup mashed potato flakes
1/3 cup grated Parmesan cheese
2 teaspoons dried parsley flakes, if desired
3/4 to 1 teaspoon garlic salt
1 (3 to 3 1/2-lb.) cut-up frying chicken, skinned if desired
1/3 cup margarine or butter, melted
1 . Heat oven to 375°F. Grease, or line with foil and grease 15x10x1-inch baking pan or 13x9-inch pan.
2 . In medium bowl, combine potato flakes, Parmesan cheese, parsley flakes and garlic salt; mix well. Dip chicken pieces in margarine; roll in potato flake mixture to coat. Place in greased pan.

4 boneless skinless chicken breats; cooked and cut into strips
(16 oz.) angel hair pasta
2 tablespoons butter or margarine
2 large cloves garlic, minced

Beat an egg and some milk together. Place chicken in it and turn to coat. Then place the coated chicken into a combination of breadcrumbs, parmasean cheese, pepper, and any dry spices you enjoy. Toss to coat, and then pan fry in a little olive oil. Have it with whatever vegetables you have on hand, and some rice. Enjoy!

Oil should be well hot, Take chicken and place into hot oil leave uncovered for five minutes, Pour one to two cups of water in pot to the amount of chicken, cover and left to cook until meat is tender. after this is done pour in a sauce of your taste to make some gravey.

Marinate it in ginger garlic paste and chilli powder.
Make a gravy of fried onions garlic tomatoes and oregano and cook the chicken in the gravy till the gravy has almost dried up and garnish with parsley

Try some of those packaged marinades from the store. I was always afraid to try them, but, some of them are actually very good. They add a little something to the basic, boring chicken recipes and I try to do something unique with my potato and veg.
