3 cups all-purpose flour
1/3 cup plus 2 tablespoons sugar -- divided
2 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon bakign soda
3/4 cup cold butter or margarine
1 cup buttermilk
1 cup dried cranberries
1 teaspoon grated orange peel
1 tablespoon milk
1/4 teaspoon ground cinnamon
In a bowl, combine the flour, 1/3 cup sugar, baking powder, salt and
baking
soda. Cut in butter.
Stir in the buttermilk just until combined.
Fold in the cranberries and orange peel.
Turn onto a floured surface. Divide dough in half. Shape each portion
into a
ball and pat into a 6" circle.
Cut each circle into 6 wedges. Place on a lightly greased baking
sheet.
Brush with milk.
Combine the cinnamon and remaining sugar. Sprinkle over scones.
Bake at 400º for 15-20 minutes or until golden brown.
CRANBERRY-ORANGE WALNUT SCONES

3-cups flour
1/2 cup sugar
1-tablespoon baking powder
1-teaspoon salt
3/4 cup butter
2-tablespoons grated orange zest
1-cup fresh cranberries
1/2 cup chopped walnuts
3/4 cup milk
1/4 cup fresh orange juice
For the glaze:
2 tablespoons half and half
2 teaspoons sugar
Preheat your oven to 425 and butter a baking sheet. In a large bowl,
mix together the flour, sugar, baking powder and salt. Blend the
butter into the dry ingredients, using your fingertips or a pastry
blender, until the mixture is crumbly. Add the orange zest,
cranberries and walnuts and toss to combine. Add the milk and juice,
and stir until the dough is rough. Gather the dough together and
place on a floured work surface. Knead gently about 10 times. Divide
the dough in half and pat each piece into a circle about 6 inches in
diameter and about 1/2 inch thick. To glaze, brush the circles with
the half and half and sprinkle with sugar. Cut each circle into eight
pie-shaped wedges. Place the scones, barely touching, on the prepared
baking sheet. Bake until puffy and golden, 15 18 minutes. Makes 16
scones.
Cranberry-Maple Nut Scones
Chunks of cranberries and sweet maple create a tasty combination in
these easy scones for breakfast or afternoon tea.
2 1/2 cups Original Bisquick® mix
1/2 cup dried cranberries
1/2 cup chopped walnuts
1/4 cup maple-flavored syrup
3 tablespoons packed brown sugar
3 tablespoons milk
1 egg
Maple Glaze (See Below)
1. Heat oven to 425ºF. Grease cookie sheet. Mix all ingredients
except Maple Glaze until soft dough forms. Turn dough onto surface
dusted with Bisquick; roll in Bisquick to coat. Shape into ball;
knead 10 times.
2. Pat dough into 8-inch circle on cookie sheet (if dough is
sticky, dip fingers in Bisquick.) Cut into 8 wedges but do not
separate.
3. Bake 11 to 13 minutes or until golden brown. Carefully separate
wedges. Drizzle with glaze. Serve warm.

1/2 cup powdered sugar
2 teaspoons milk
1 teaspoon maple-flavored syrup
Beat all ingredients until smooth.

2 tablespoons confectioners' sugar
1/2 teaspoon grated orange peel
SCONES:
2-1/2 cups all-purpose flour
2/3 cup sugar
2-1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup cold butter (no substitutes)
1 cup chopped fresh or frozen cranberries*
3/4 cup buttermilk
In a mixing bowl, cream butter. Stir in cranberries, confectioners; sugar and orange peel; mix well. Cover and refrigerate for at least 1 hour. Meanwhile, combine the dry ingredients in a bowl. Cut in butter until mixture resembles coarse crumbs. Add cranberries. Stir in buttermilk just until moistened. Turn onto a lightly floured surface; gently knead 6-8 times. Divide in half. Pat each into an 8-in. circle. Cut into eight wedges. Place 1 in. apart on ungreased baking sheets. Bake at 400° for 15-18 minutes or until lightly browned. Remove from pans to wire racks. Serve warm with cranberry-orange butter. Yield: 16 scones. Editor's Note: 3/4 cup dried cranberries may be substituted for the fresh or frozen cranberries.

1 cup fresh cranberries, coarsely chopped
1/2 cup chopped walnuts or pecans
2 teaspoons finely grated orange peel
1 cup buttermilk
1 tablespoon milk or evaporated milk
1 tablespoon sugar
1/4 teaspoon cinnamon
PREPARATION:
In a large bowl, combine flour, 1/2 cup sugar, baking powder, baking soda, and salt. Stir to blend. With a pastry blender, cut in butter until mixture resembles coarse crumbs. STir in cranberries, walnuts or pecans, and grated orange peel.
Mix buttermilk in with a fork just until dry ingredients are moistened.
On a floured surface, roll or pat dough out into a 3/4-inch thick circle. Cut into rounds with a 2 1/2-inch cutter. Place rounds on a large greased baking sheet, about 1 1/2 to 2 inches apart. Brush with milk or evaporated milk. Combine 1 tablespoon sugar and 1/4 teaspoon cinnamon; sprinkle a little of the mixture over each scone.
Preheat oven to 400°. Place scones on lower oven rack. Bake for about 15 minutes, or until lightly browned.
Makes 12 scones.

CRANBERRY SCONES
2 1/4 c. flour (all-purpose)
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cloves
1/4 c. butter
1 c. heavy cream
3/4 c. fresh or thawed cranberries
Set aside 2 tablespoons cream to brush on top of scones.
Combine dry ingredients; cut in butter. Add cream and cranberries. Cut in rounds. Cook at 425 degrees for 15 to 18 minutes.

1/2 c 2% milk
1/4 c sugar
2 tsp grate lemon rind
1 tsp vanilla extract
1 large egg
2 c all-purpose flour
1 tbls baking powder
1/2 tsp salt
3 tbls chilled butter, cut into pieces
1 c fresh cranberries
1/4 c finely chopped pecans, toasted
cooking spray
1 large egg white, lightly beaten
2 tbls sugar
Preheat oven to 375. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Combine flour, baking powder, and salt in large bowl, stirring with whisk. Cut in butter until mixture resemble coarse meal. Gently fold in berries/pecans. Add milk mixture, stirring just until moist. Turn dough out onto a floured urface. Pat into an 8 inch circle. Cut into 10 wedges, and place on a baking sheet coated with cooking spray. Brush with egg white, wprinkle with sugar. Bake for 18 minutes.
