when dogs grow, it's almost like chickens.
you know whe chickens are babies and they're yellow and cute and soft and fluffy? but then they grow up into these ugly brown, feathered annoying birds?
same with dogs, kinda. (most dont grow up to be ugly)
when they're young, they're tiny, and soft, and smooth. but then when they grow, certain breeds' hair starts to change. sometimes it thins, sometimes it thickens. sometimes it gets wavy, sometimes coarse. some get prickly fur, some get curly & smooth. sometimes in a dog's life, the colors of the coat will also change with time.
because its part shar pei, which is usually a dog with thicker, pricklier hair, and part cocker spaniel which has wavy and curly, smooth hair, you're dog is probably gonna have a lot of inconsistencies in its coat when it grows.
but just make sure to brush once a week and the coat will stay nice. also protein in a dogs diet makes a coat shiny and thick.

Cocker's have wavy coats of hair, she is probably morphing into looking more like a Cocker than the Shar-pei. What kind of ears? Long droopy or short triangles? When she is all grown up I bet she will be a real cutie.
PS you should keep your eyes open for any skin irritations that might occur do to her 2 breeds.

Most puppies lose their puppy fur between the ages of 3 and 6 months. The adult coat takes over - and becomes breed typical. In your case this is the wavy coat of the spaniel part of the pup.

A puppies/dogs coat can change up until the age of 2 when they have fully stopped growing. If it changes after that it is due to something in the food or environment, or allergy. Good luck.

As the puppy is maturing it will go through different stages. They slowly shed their puppy hair, as the new mature hair comes in. Sometimes they go through a "look" that's not as attractive for awhile. . .we experienced that with our puppy 4-5 months old. By the time she was six months old she had her adult coat with waves. Now her hair is growing longer. Our vet told us, with an Australian Shepherd puppy, it would take about a year for her coat to be full length.

You need to be sure that you are diagnosing the problem correctly... could it be protective of you or your room? Have you tested that theory with other people coming into your room? Also, pinning a dog in the corner is probably not the best idea, especially by someone who is 'aloof' when it comes to dogs. If it really is the fear aggression, then what your mentor suggested should work... But I would make it a much more structured environment than just your dad walking around with treats in his pockets waiting to go into the same room as her...

Yes, a puppy's coat will change as it grows. My dog used to be a little fluff ball. Now, her hair is coarse and sleek.
