As a Chef, I would not recommend substituting applesauce or oil for a pecan pie. You need to use something that will give it a flaky crust. Only shortening or butter will give it a nice, tender, flaky crust. You can find all-vegetable shortening at some Health Food stores, but it is hard to come by.
If its for the guts of the pie, you can simply omit the butter. Its not necessary.

If you're baking bread you can use applesauce, but if it's a pie I would definitely use oil. The pie would have a strange consistancy if you used apple sauce. You might also want to try mayonnaise (just a little bit, use a half mayo and half oil) for the texture. If you aren't using butter because you don't want dairy or you want to be healthy, try using soy margarine or soy mayonnaise. I think it tastes great.

If the butter is used to make the caramel sauce for the pecans or if it is used in the crust the only thing you can really use is margarine

I use canola oil as a butter substitute on my tortillas, but I've never tried it on pie. Try it. If it's really lousy, give it to your neighbors. If it's really good, send a slice to me!

because of the fact you're already making fruit based bread, in user-friendly terms a sprint greater of what you have already got been given. I do it continuously with banana bread. My recipe demands 3 bananas and one million/2 cup butter. i take advantage of one million/4 cup fat (or much less)and yet another banana. Works advantageous. i might try this throughout your pumpkin and banana breads.

Both are good for you, each fruit/vegetable has different vitamins. Thus as more variety, as better. Vegetables have generally less sugar than fruits.
