Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.

For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.

For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

Ingredients:


2 cup Pumpkin (Kadhu)
3 cup Sugar
1 cup Oil
3 Eggs
3 cup Fine Wheat Flour (Maida)
1/2 tsp Salt
1/2 tsp Baking Powder
1 tsp Baking Soda
1 tsp Cloves Powder (Lavang)
1 tsp Cinnamon Powder (Tuj/Dalchini)
1 tsp Nutmeg Powder (Jaiphal)



How to make pumpkin cake recipe:
In a blender, add pumpkin, sugar, oil and eggs.
In a bowl sift flour, salt and baking powder and baking soda.
Now mix the blended pumpkin and egg mixture to the dry ingredients and mix well.
Pour the mixture in a wax paper lined 8" pan.
Bake the pan in a preheated oven at 350F for 1 hour and fifiteen minute.
When done take it out with the help of a knife and dust with powdered sugar.

Pumpkin Cobbler

1 (29 oz) can of Pumpkin
1 tsp. cinnamon
1/4 tsp. nutmeg
6 eggs, room temperature
1 cup of brown sugar
1 package of Yellow Cake Mix
2 cans sweetened condensed milk
1 cup of chopped Pecans, or more to taste
2 sticks of butter

Mix: Pumpkin, spices, eggs, brown sugar, cake mix, 1/2 of the pecans, and 1 can of eagle brand.

Melt: One stick of butter in a 9 x 13 pan. Make sure the pan is fully coated with the butter.

Pour: The first mixture into the pan.

Bake: 350ºF for 40-60 minutes.

Melt: The other stick of butter and add the other can of eagle brand and the other half of the pecans, and mix together. Pour this mixture over the top when it comes out of the oven.

Serve warm. Top with cool whip, whipped cream or ice cream.

NO CREAM CHEESE, BUT REALLY YUMMY PUMPKIN CRUNCH CAKE INGREDIENTS 1 (15 ounce) can pumpkin puree 1 (12 fluid ounce) can evaporated milk 4 eggs 1 1/2 cups white sugar 2 teaspoons pumpkin pie spice 1 teaspoon salt 1 (18.25 ounce) package yellow cake mix 1 cup chopped pecans 1 cup margarine, melted 1 (8 ounce) container frozen whipped topping, thawed DIRECTIONS Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch baking pan. In a large bowl, combine pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, and salt. Mix well, and spread into the prepared pan. Sprinkle cake mix over the top of the pumpkin mixture, and pat down. Sprinkle chopped pecans evenly over the cake mix, then drizzle with melted margarine. Bake for 60 to 80 minutes, or until done. Top with whipped topping when ready to serve.

Try your library and look for cake recipe books.

Lots of time you can add food colour to the mix at the time of mixing.

Yellow colour come from many items but mostly from egg yoke and unbleached flour.
