Keep this kind of salad in your refrigerator for snacking:
Red Potato and green bean salad
1 1/2 pounds small red-skinned potatoes
3/4 pound small green beans, rinsed and stem ends trimmed
1 small sweet onion coarsely chopped
1/4 cup chopped fresh basil leaves
Prepare Balsamic Vinaigrette. In a large pot over medium-high heat, steam potatoes until tender. Remove from heat and let cool; cut into quarters.
In a pot of boiling salted water, cook green beans approximately 5 to 6 minutes or until crisp tender. Remove from heat and drain. Transfer bean to a bowl of ice water and let cool. When cool, drain and cut beans in half.
In a large bowl, combine potatoes, green beans, sweet onion, and basil. Add Balsamic Vinaigrette and toss to coat. Season with salt and pepper to taste.
NOTE: This salad will hold for several days and improves in flavor. You can serve the salad chilled or at room temperature.
Makes 4 servings.
BALSAMIC VINAIGRETTE:
1/4 cup balsamic vinegar
1 clove garlic, minced
2 tablespoons fresh lemon juice
Dash of Worcestershire sauce or to taste
1/2 cup extra-virgin olive oil
2 tablespoons Dijon mustard
Coarse kosher salt
Coarsely ground black pepper
In a small bowl or jar, whisk together balsamic vinegar, garlic, lemon juice, Worcestershire sauce, olive oil, and Dijon mustard. Season with salt and pepper to taste. Cover and refrigerate until ready to use. To use, bring to room temperature.

Cucumber Sandwich
* 2 thick slices whole wheat bread
* 2 tablespoons cream cheese, softened
* 6 slices cucumber
* 2 tablespoons alfalfa sprouts or brocollie sprouts
* 1 teaspoon olive oil
* 1 teaspoon red wine vinegar
* 1 tomato, sliced
* 1 leaf lettuce
* 1 ounce pepperoncini, sliced
* 1/2 avocado, mashed
DIRECTIONS:
1. Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

Ever tried steamed veggies? I steam carrots, brussels sprouts, onions, squash, cauliflower and even radishes.The list of what you can steam is endless. I do a cheese sauce -- low cal is fine -- made with Swansons no fat chicken broth. Delicious! Family loves it! I usually use baby carrots and cut everything else up in to bite size portions. Seasoning is to your taste. I use garlic and lemon pepper with a tiny bit of salt and pepper.
Now, I didn't say this was an easy snack idea but it's way easy.

French fried yams are great.
Baked french cut potatoes:
Slice potatoes like french fries and bake with salt pepper and chilli powder on a cookie tray!
Cut some celery and carrots and dip them in light honey mustard dressing! I don't even like mustard but it's awesome!
I know you said "snack ideas" but, I often substitute starches for veggies at dinnertime and here are some yummy ideas:
I LOVE baked carrots! Put them in an oven-safe dish, sprinkle a teeny bit of water on them (so they don't dry up), put a little butter, sprinkle some brown sugar, garlic salt and black pepper on them and bake for about 20 minutes at 350 or until it's tender enough to enjoy!
Chopped spinach is also great with some butter and garlic.
Yams are tasty mashed with potatoes together with a little butter and garlic salt.
Squash is awesome (acorn especially) when you prepare it correctly.
Slice the squash into wedges (cut along the lines on it's skin)
Scrape the seeds out
Boil on the stove for 10 minutes (or less-until partially cooked)
Line them up on a cookie sheet
Sprinkle them with salt, pepper and olive oil
Bake for less than 10 minutes (until tender)
Stir fried veggies are also great! Using a wok, toss some fresh broccolli, cauliflower, green beans, yellow beans, green, red and yellow peppers all with some oyster sauce and dash of sugar until they become the texture of your choice.
Mmmm I think that's what I'll have for dinner tonight!

Honey Glazed Carrots:
1 1/2 quarts water
5 cups thinly sliced carrots
3 tbls chopped fresh parsley
3 tbls honey
1/2 tsp salt
1/2 tsp grated orange rind
1/4 freshly ground black pepper
Bring water to a boil. Add carrots and cook for twenty minutes/until tender. Drain well. Place carrots and remaining ingredients in a large bowl and toss gently.

Take some different kinds of vegetables,dip in egg and shake in bag with some Shake N Bake mix,bake about 20 -30 minutes and serve with ranch dip
