You can convert this recipe by using cupcake pans instead of a cake pan. You can either coat the cupcake pan with nonstick cooking spray or use cupcake liners.
Chocolate Cake
Yield: 16 servings
3/4 c Margarine, at room temperature
1/4 c Sugar
1/2 c Liquid egg substitue, at room temperature
Liquid sugar substitue equal
To 1/3 cup sugar
2 t Vanilla
2 c Cake flour
2 t Baking powder
1/4 c Instant dry milk;
1/3 c Cocoa
1 c Water, at room temperature
3 Seconds Nonstick Cooking Spray
Cream together margarine and sugar at medium speed until light and fluffy. Add egg substitue, sweetener, and vanilla to creamed mixture and beat at medium speed for 1/2 minute. Stir together flour, baking powder, dry milk, and cocoa to blend. Add 1 cup water to creamed mixture along with flour mixture and mix at medium speed only until smooth. Coat a 9-inc squar baking pan with nonstick cooking spray and spread the batter evenly in the bottom of the pan.
Bake at 350ºF. for 30-35 minutes or until a cake tester comes out clean and the cake pulls away from the sides of the pan. Cool to room temperature and cut 4 x 4 to yield 16 equal servings.

Chocolate-Fudge Frosting
Yield: 6 servings
3 tb Unsweetened cocoa powder
3 tb Safflower oil
1 c Sugar
1/4 ts Salt
1/3 c Evaporated skim milk
1 ts Vanilla
In medium saucepan, combine all ingredients except vanilla. Bring to a boil, reduce heat and simmer 1 minute. Remove from heat. Add vanilla; beat 5 minutes with electric mixer. Spread over cake.

Very yummy chocolate cake!
2 1/3 cups all-purpose flour
1 tablespoon baking powder
3/4 teaspoon salt
2 cups white sugar
3/4 cup cocoa powder
1/2 cup shortening or 1/2 cup vegetable oil
2 eggs
1 cup milk
1 teaspoon vanilla extract
Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add 3/4 cup cocoa powder. Then add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.
Pour batter into greased and floured 9x13 inch pan. Bake in preheated 350 degree F oven (175 degrees C) for 25 to 30 minutes.

Here is a recipe for the best chocolate cake I've ever eaten!
2 cups flour, 2 cups sugar, 1 cup Hershey's unsweetened cocoa, 1 teasp. baking soda, 1 teasp. baking powder, pinch salt, 1 cup milk, 1 cup coffee, 2 eggs, 1 teasp. vanilla, 1/2 to 2/3 cup oil.
Mix dry ingredients and liquid separately. Combine and pour into greased and floured 9x13 pan. Bake 35 minutes @ 350.

I don't think you're actually looking for a recipe for a cake mix, you're looking for the recipe for the cake itself. However, in case I'm wrong, this is a reasonably easy recipe to make cake mixes that can be cooked later. It makes enough mix to cook 22 Easybake Oven cakes so you should be able to get 22 cupcakes out of it by using cupcake tins and a regular oven.
Chocolate Cake Mix
1 cup sugar
3 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable shortening
In a medium bowl, combine sugar, cocoa powder, flour, baking soda and salt. Stir with a wire whisk until blended. With a pastry blender, cut in shortening until evenly distributed and mixture resembles corn meal.
Spoon about 1/3 cup of the mixture into each of 11 small containers with tight fitting lids or ziplock bags. Seal containers. Label with date and contents. Store in a cool dry place. Use within 12 weeks.
Makes 11 packages of Children's Chocolate Cake Mix for Easybake style oven.
To Use: 1 package cake mix + 4 tsp. water. Mix together and stir with a fork or spoon until blended and smooth. Pour mixture into greased and floured 4 inch round miniature baking pan.
Follow directions for child's oven, or bake in mom's preheated 375° F. oven for 12 to 13 minutes. Remove from oven and cool in pan on a rack for 5 minutes. Invert onto a small plate and remove pan. When cool, frost with Children's Chocolate Frosting.
Serves 2 children.
Chocolate Frosting
2 cups icing sugar -- sifted
3 tablespoons instant nonfat milk powder
1/2 cup unsweetened cocoa powder
6 tablespoons vegetable shortening
In a medium bowl, combine icing sugar, milk powder and cocoa powder. (Sift cocoa if lumpy.) With a pastry blender, cut in he shortening.
Spoon about 1/3 cup of mixture into each of 9 small containers or ziplock bags and seal tightly. Label with date and contents. Store in a cool dry place. Use within 12 weeks.
Makes 9 packages
To Use: 1 pkg. Children's Chocolate Frosting mix + 3/4 tsp. water .In a small bowl, combine frosting mix and water. Stir with a spoon until smooth.
Makes about 1/4 cup.
