Flour coat the fruits well and dust off excess flour.
Minced or well ground dried fruit are smaller and can be mixed into the cake mixture, the less chunky they are the better they stay into the cake mixture and bake and not sink to the bottom.

Before placing the fruit in the cake, coat lightly in flour. This will prevent it from sinking! If the flour isn't sticking to the fruit, first sprinkle it with a little lemon juice.

pre-bake the cake for 10 mins or so, then take it out and toss the fruit on top, they will sink about 1/2 way down as the cake bakes. Works like a charm!!!

If you dust the fruit with flour before adding to the batter it should float freely, and not settle to the bottom. I know it works when making blueberry muffins.
