Here is something delicious and easy:
Berry Cream Cake
- 1 Sara Lee Pound Cake
- 1 box of fresh raspberries
- 1 box of fresh blueberries
- 1 box of fresh blackberries
- 1 box of fresh strawberries
(Note: you can substitute all of the above berries with a bag of frozen mixed berries if fresh aren't available)
- 1 box of Jello instant vanilla pudding
- Cool Whip
Make the pudding per the instructions and place in the fridge. Combine all berries in a bowl, sprinkle with sugar and stir. Cover and place in fridge for an hour to allow juice to develop.
Slice pound cake into three pieces lengthwise. Spread pudding between the layers. Spread Cool Whip on the top and then pour berry mixture over the entire cake.

Shortbread
3 1/2 cups flour
four sticks softend butter
2 1/2 cups confectioners sugar (powdered Sugar)
1 tablespoon vanilla more or less.
1/4 cup granulated sugar.
Preheat oven to 350. Cream together the butter and sugar in a big bowl(do not overblend). Add the vanilla and slowly add the flour.
Take a cookie sheet that is 1/2 - 1inch deep and measures13x9 or 15x9...Spread the dough in the enitre pan using your fingers. Place in oven for 20 minutes. Remove from oven. Using a fork, poke holes starting from the upper corner going down keeping the holes close together. Continue doing that in rows all over. Sprinkle granulated sugar all over the shortbread. Place back in oven for an additional 10 minutes. Take out, cut immedieatly cut in slices. Leave in pan to cool.

You can dress this up with a can of your favorite pie filling. Spread the pie filling ovenr the finished cheesecake and enjoy!
Cheesecake
Serves 6-8
INGREDIENTS:
1 (8 ounce) package fat-free cream cheese
1 (15 ounce) container part-skim ricotta cheese
1/2 cup fat-free sour cream
3 egg whites
1 tablespoon all-purpose flour
1/2 cup granular sucrolose sweetener (eg. Splenda™)
1 teaspoon vanilla extract
DIRECTIONS:
Preheat the oven to 325ºF (165ºC). Grease a 9 inch pie plate.
In a medium bowl, mix together the cream cheese, ricotta cheese, sour cream and egg whites until smooth. Stir together the flour and sugar substitute; mix into the cheese batter along with vanilla. Pour into the prepared pie plate and smooth the top.
Bake for 60 minutes in the preheated oven, or until the top is nicely browned. Cool completely before slicing and serving.

Pistachio pie (assuming no nut allergy)
1 box Jello pistachio pudding mix
1 ~15 oz. can crushed pineapple
1 12 oz. Cool Whip
1 graham cracker crust
Drain a little juice from the pineapple, dump pineapple into a bowl. Sprinkle the pudding mix over the pineapple. Stir and let sit for 10-15 minutes. Fold in the Cool Whip. Put in the pie crust and let chill in the fridge for a few hours or until gelled.

Skillet Apples 1/3 cup butter or marj. ½ cup sugar 2 tablespoons corn starch 1 ½ cups water ¼-½ tsp cinnamon 4 medium apples cored, unpeeled and cut in ½ inch slices. In 10 inch skillet melt butter at medium heat 3 to 4 minutes.stir in sugar and cornstarch, mix well. Add rest of ingredients cover and cook over medium heat spooning sauce over apples occasionally, until apples are fork tender and sauce is thickened. About 15 minutes Chocolate Mousse • 8 ounces chocolate chips • 6 tablespoons water • 2 teaspoons vanilla • 2 cups whipping cream • 1/4 cup confectioners' sugar Directions 1. Melt chocolate and water in saucepan. 2. Whisk in the vanilla. 3. Allow to cool. 4. Whip the cream. 5. Add the confectioner's sugar. 6. On low beater, blend in the chocolate. 7. Scoop the Chocolate Mousse into a clear, glass bowl. 8. Garnish with grated chocolate or some of the chocolate from the pan drizzled on top.

Margarita PIe (recipe from Williams Sonoma)
2/3 cup lemon-lime margarita mix
1 can sweetened condense milk
3 egg yolks
1 pie crust (graham cracker or regular)
Bake pie crust as instructed to golden. MIx ingredients together and pour into pie crust. Bake at 350 degrees for 9-12 minutes until pie is set. Chill for at least 2 hours or until ready to serve.
Chocolate cake recipe
1 box German Chocolate Cake mix
8 oz cream cheese
1/2 cup sugar
1/4 cup milk chocolate chips
1/4 cup milk chocolate chips
Mix german chocolate cake mix according to box directions, and place in 13x9 pan. Mix cream cheese and sugar. Then add 1/4 cup chocolate chips. Blend mixture into cake mixture. Then sprinkle the last 1/4 cup chocolate chips over the top, and bake according to cake mix directions.
No bake oatmeal cookie
In medium saucepan combine:
1/4 tsp salt
1 1/2 cups sugar
1/3 cup cocoa
1/2 cup of milk
1 stick margarine
Stir together and bring to a rolling boil for approx. 1 1/2 minutes.
Take off heat and add:
1/2 cup peanut butter (allow to melt before adding oatmeal)
3 cups quick oatmeal
1tsp vanilla
Drop onto wax paper, refrigerate.

Millionaire Pie
1 Graham cracker crust

1 can drained fruit cocktail

2 chocolate chip frozen Ego waffles
Creamy Peanut Butter
Nutella (Chocolate Hazelnute Spread)
Crushed Hazelnuts/Peanuts
Toast Waffles until warm and toasty. Spread one with peanut butter, the other with nutella. Sprinkle one side with crushed nuts. Place together to form a sandwhich. Put in microwave for 10 seconds or until the filling is warm and runny. Enjoy with a napkin!
