Mushroom Appetizer
Yield: 6 servings

2 lb Fresh mushrooms
1 pk Garlic or Italian ''Good Seasons'' mix
1/4 lb Butter

Saute cleaned mushrooms in butter for 5 minutes. Sprinke with the package of ''Good Seasons'' dressing mix. Simmer covered, do not boil, for 1-1/2 hrs. Serve with toothpicks. They go fast.

Mushroom Turnovers
Yield: 8 servings

PASTRY INGREDIENTS
1 c Butter (Slightly Softened)
2 c Flour
1 pk Cream Cheese (Softened)
1 Egg
1/2 ts Salt
2 ts Milk

MUSHROOM FILLING
2 cn Stems And Pieces (4 oz)
1 ts Lemon Juice
1/2 c Onions (Minced)
2 ts Flour
1/2 ts Salt
1/2 c Light Cream
1/8 ts White Pepper

Pastry: Combine butter, cream cheese and salt and beat well. Add flour and blend. Wrap dough in waxed paper 8x6 rectangle and chill overnight. Remove 10 minutes before rolling. Roll part of dough at a time to 1/8 inch thick.

Cut into 2 1/2 inch rounds. Put 1 teaspoon of filling in each. Moisten edges and fold double. Press edges with fork to seal. Mix egg with milk and slightly beat. Brush with and milk and chill 1 hour. Bake at 350F for 25 minutes or until golden brown. May be frozen. Makes 5 dozen.

Mushroom filling: In pan, saute mushrooms and oinions in butter. Sprinkle in salt, pepper, lemon juice and flour. Stir and simmer 2 minutes. Gradually add cream and stir util smooth and thickened. Chill. Add 1 T sherry or dry vermouth before chilling, if desired.

Mushroom and Chicken Fajitas

2 qt Red, green, and yellow peppe
8 ea Onion, red, thinly sliced
24 ts Vegetable oil
32 c Mushrooms, sliced
8 lb Chicken breasts, cut in stri
1 1/3 T Chilli and cumin
64 ea Tortillas heated
1 x Cheese, grated


Saute peppers and onion in 1 tsp of the oil 3 minutes. Add Mushrooms; cook 5 mintues, stiring; set aside. Add remaining oil. Dust chicken with seasonings; saute stirring 6 minutes, or until no longer pink. Toss with vegetables. Place in centre of tortillas; roll up. Spinkle with cheese.

Mexican mushroom soup
(6 portions)

3 spoons oil
1/4 onion finely chopped
2 fresh tomatoes, seedless and chopped
1/2 kg mushrooms sliced
6 wormseed leafs (epazote)
4 cups chicken broth

Warm oil and fry onion and tomatoes, add mushrooms, wormseed leafs, chicken broth. Boil 5 minutes or until mushrooms are cooked but firm.

How about Pasta with cream mushrooms!

8 oz mushrooms
salt and pepper
1 tsp oil
14 oz of pasta
8 fl oz double cream
Nutmeg
1 oz fontina or melting cheese
Powdered truffle
1 white truffle (if you can afford one)

wipe mushrooms and remove stalks, slice tops and put into a bowl, add salt, pepper and oil to mushrooms and leave to stand.
Put pasta to cook in boiling salted water until al dente.
Meanwhile pour cream into a saucepan, add the truffle powder, nutmeg and the mushrooms and leave to simmer for about 10 mins, Slice cheese thinly.
Drain pasta, mix in the cheese and spoon on to s serving dish, cover with the mushroom sauce and garnish with slices of white truffle (if you can afford them !!!!)

Can't make one, no, they just grow on their own. Levity aside, everyone I make a really simple dinner for with mushrooms loves it when:
Hamburger-a few pounds as needed is browned (fried)
grease is drained (the dog loves it on his food)
Garlic salt- add to hamburger to taste
Onion- large one-cooked with hamburger
Mushrooms1-2 boxes whole and fresh mushrooms -cut and
saute
Sour cream, large-
mix all the above together and heat a few minutes
Mushroom soup-(add no milk or water) mix with all of above
Shredded cheese-type of your preference -one bag is sprinkled
in pan on top of above ingredients
Rice 2 cups-cooked
pour the pan mixture over the rice and it is ready to serve
If you want to add breaded mushrooms as a side-mmmm
Don't forget to invite me over for some!

stuff em......get a block of cream cheese, let it soften, add lemon pepper, bread crumbs(italian style) one egg, and crab meat. Take out the mushroom stalks and chop them up fine and add to mix, stir till completly mixed, stuff the mushrooms and put in oven on 350 for half an hour, take out and squeeze lemon juice(real lemon) on top of the mushrooms and serve.

Clean them and then dip them in beaten egg white mixed with cornstarch and cold water.
Then in flour, then back in the cornstarch mixture then in the flour and fry. Nothing better!!
