This is a wonderful cake and very easy!

Mandarin Cake

1 Package Yellow Cake Mix
4 eggs
1 can (11 oz) Mandarin oranges (reserve liquid)
3/4 cup Vegetable Oil

Pour 1 cup of liquid from mandarin oranges into measuring cup. If there is not enough to make 1 cup , add water. Chop oranges. Mix all ingredients with mandarin liquid. Pour into 3 greased pans lined with wax paper. Bake 20-25 minutes at 350.

Manadarin Cake Frosting

1 can (20 oz) Crushed Pineapple with Juice
1 package (3 1/2 oz) Vanilla Pudding Mix
1 carton (12 oz) Cool Whip

Mix ingredients and frost cake. Refrigerate.

Apricot-Almond Coffee Cake:

4 ounces cream cheese, softened
1/2 cup apricot preserves
1 (16-ounce) package pound cake mix, divided
Pinch of orange food coloring powder (optional)
1 (8-ounce) container sour cream
1/2 cup milk
2 large eggs
1/2 teaspoon almond extract
1/2 cup sliced almonds
Glaze

Beat cream cheese, apricot preserves, 1 tablespoon cake mix, and, if desired, orange food coloring powder just until blended; set mixture aside.

Beat sour cream, milk, eggs, almond extract, and remaining cake mix at low speed with an electric mixer 30 seconds or until blended. Increase speed to medium, and beat 3 more minutes.

Pour into a lightly greased 13- x 9-inch pan. Drop cream cheese mixture by rounded teaspoonfuls evenly over batter. Swirl batter gently with a knife. Sprinkle almonds evenly over top.

Bake at 350° for 25 to 28 minutes or until golden.

Cool on a wire rack 20 minutes. Drizzle Glaze over slightly warm cake or individual pieces.

Yield: Makes 15 servings

2 sticks) unsalted butter, softened * 3 cps sugar
6 lrge eggs * 3 cps all-prpse flour *
1/2 tsp. baking powder * 1/2 tsp salt * 1 cp heavy cream * 2 tsp vanilla extract
Grease and flour a 10-inch bundt pan.
Don't preheat the oven.
Cream butter + sugar until fluffy. Add eggs one at a time, beat well. Sift flour, baking powder, & salt. Alternate flour mixture & heavy cream to butter-sugar mixture, end with four. Add vanilla or use any other flavoring that you like.
Bake @ 325* for 1 hr 15 min. dont open oven . if needed bake for 10/15 min more. Take out & cool for 15 minutes. then invert cake into serving plate. I'll top it with strawberry sauce or fresh macerated in rum mixed berries.

I bake at least once a week, if not more often, and have found some of my favorite cake recipes at the following site. Very thorough, just about every kind of cake available - chocolate, yellow, white, spice, angel food, pound, etc. Hope this helps you!

CARROT CAKE:
2 cups sugar
1 1/2 cups Crisco oil
4 eggs
2 1/4 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons cinnamon
3 cups grated raw carrots
1 1/2 cups chopped walnuts
Mix in large bowl, sugar, oil and eggs; beat well. In separate bowl, sift flour, salt, baking soda and cinnamon. Blend dry ingredients into egg mixture. Stir in carrots and nuts. Pour into prepared pans. Bake at 300 degrees for about 60 minutes or until toothpick inserted in center comes out clean. Cool well before applying frosting.

CREAM CHEESE FROSTING:
1 (8 ounces) package cream cheese, softened
1/2 cup margarine or butter, softened
1 teaspoon vanilla extract
3 cups sifted powdered sugar
1 Tablespoon milk
Cream all ingredients together until spreading consistency.

Pumpkin Bread

1 1/2 Teaspon of vegtable oil
2 Teaspons of pumpkin
4 eggs
3 Teaspon of flour
2 teaspons of sugar
3 spoon full of baking soda
3 cups of baking power
1 cup of salt
2 cups of cinnamon

Mix then all up in a bowl.
Then put it in a pan and put it in the oven for about 35 minutes or until it's brown-ish. At 350 degress F.

cake mixes are the easiest --and taste about the same supposedly.

it's the icing that's the difference. the book best recipe has great icing recipes.

you could go to google and type in recipes. You'll get a list of sites that give free recipes. I go to www.allrecipes.com and they have great stuff. here's my fav recipe. Lemon sponge cake


INGREDIENTS:

* 7 egg whites
* 1/4 cup brown sugar
* 1/4 cup fructose (fruit sugar)
* 1/2 teaspoon salt

* 4 egg yolks
* 1/4 cup brown sugar
* 1/4 cup fructose (fruit sugar)
* 3/4 cup all-purpose flour
* 1/4 cup fresh lemon juice

DIRECTIONS:

1. Preheat oven to 350 degrees F (175 degrees C).Grease and flour a 10 inch tube pan.
2. In a large mixing bowl, combine the egg whites and salt. Whip with an electric mixer until soft peaks form. Continue mixing while gradually adding the 1/4 cup of brown sugar and fructose. Whip to stiff peaks, but not blocky.
3. In a medium bowl, combine the egg yolks, brown sugar and fructose. whip with an electric mixer until stiff and pale. Gradually mix in the lemon juice. Remove from mixer and fold sifter flour in by hand with a rubber spatula. Fold 1/3 of the egg whites into the yolk mixture until well blended, then fold the yolk mixture into the remaining egg whites. Pour batter evenly into the prepared pan.
4. Bake for 30 to 45 minutes in the preheated oven, until a toothpick inserted comes out clean. Allow the cake to cool for 10 minutes in the pan before inverting onto a wire rack to cool completely.


You could make a glaze to go with it. I usually beat 4 cups confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon grated lemon zest until smooth. I beat in 2 tablespoons of milk, continue to beat until light and fluffy. spread it over the cake and i'm sure you'll love it.

Refrigerator Cake:
2 (4oz) bars sweet cooking chocolate
5 eggs, separated
1 tsp vanilla
12 lady fingers
1 c heavy cream

Melt chocolate in top of double boiler over boiling water. Beat egg
yolks well. Add vanilla and yolks to chocolate, beat well.Beat egg
whited until stiff, fold into chocolate mixture. Line a 1 qt bowl or
mold with waxed paper. Pour a little chocolate into bottom of mold. Line sides of bowl with lady fingers halves, pushing ends into filling to keep upright. Add layer of ladyfingers, then remaining filling. Top with remaining ladyfingers. Refrigerate 12 -24 hours. Unmold on dish. Remove paper. Whip cream and decorate with cake decorator or spread cream over dessert.

HUMMING BIRD CAKE (this cake is very yummy)

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups of sugar
1 teaspoon ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
1 and 1/2 teaspoon vanilla extract
1 (8-oz) can crushed pineapple, undrained
1 cup chopped pecans
2 cups chopped bananas

-combine first five ingredients in a large bowl; add eggs and oil, stirring until dry ingredients are moistened. ( do not beat). Stir in vanilla, pineapple, 1 cup pecans, and bananas
-pour batter into three greased and floured 9-inch round cakepans Bake at 350 for 25 minutes or until a wooden tooth pick insterted in center comes out clean. cool in pans on wire racks 10 minutes, remove from pans and cool completely on wire racks.
