I recently went to a sony shop and noticed that the huge sized CRTs had less clarity and sharpness than the small ones (15 inches and 21 inches) had the best clarity and sharpness levels.

Yes. The number of scan lines remain the same however; the lines are spread out over a larger area resulting in less clarity and sharpness.

The short answer is Yes, here's why and what else should be considered. Broadcast standards were established when screen size maxed out at 21", 240 lines alternated or 480i, this means the complete screen is scanned twice to provide all the pixels for your picture. Progressive means it is done in one pass, this is available on the newer sets. As the screen size gets bigger, the same information is stretched to fill a much bigger area, giving rise to multiple technologies dealing with this problem, line doubling, multiplying, stretching, expansion, etc.; HDTV gives you 8x as much information enabling sets to once again grow to enormous size with clear pictures, but the same situation holds true, the bigger the set with given information, the less clear the picture, everything else being equal. The Sony Trinitron came on the scene with twice the chassis voltage of other sets of the era, but optimized for a 15" picture...times change.
