I was on Student Council in high school (graduated in 2000), and was responsible for a lot of assemblies, pep rallies. We had a Battle of the Classes every year during homecoming. Each class (sophomore, junior, senior) represented the school colors and on the day of the big Battle, everybody in the school dressed up in the particular color their class level represented. (ie. Seniors wore Green, Juniors wore Blue, Sophomores wore White).

The assembly was three hours long and took place in the large basketball gym with each class divided among the three sets of bleachers. We had about 3,000 students at our school. Each class had some volunteers to compete against each other in "gladiator-type" events like

-jello wrestling,
-relay racing/obstacle course,
-summo wrestling (with the fat suits),
-school spirit contests (in which volunteers performed something crazy for the whole school to show they had the most spirit),
-live goldfish eating (though a few people were offended :os),
-a massive tug-o-war with about 20 people from each class with jello in the middle,
-and other activities that competed classes against each other.

We also had "halftime" performances by the drill team, breakdancing club, etc. All this took place as a 2-3 hour assembly in the basketball gym.

Everybody loved it and we had a lot of fun planning it. If you want more ideas, feel free to email me and I'll dig out my SBO (student body officer) workbook and email you some ideas if I can find some.

EDIT: Sorry here is my correct email addy: slcboy1981@yahoo.com

Get a dunking booth (that's really fun to watch in chilly October) or have some kids have a bobbing for apples contest. Get a group of kids (guys) to go shirtless and paint their bodies with the school colors like many fans do at professional sporting events. Have fun!

One year my school put trash bags the length of the gym and covered them in whipped cream and people from each grade had to run and try to slide the farthest.

have the class favorites come to the middle of the school gym floor and make fools of themselves, such as racing to see who can finish a homemade pie first.
