Do you mean the start menu? Or do you mean programs that are always running in the background?
The start menu is what you click and it list all programs, e-mail, control panel and so on and so on.
Now to lesson the programs that are always running in the background. This is what you do, click start, run, type msconfig, click okay. Select the startup tab, anything that is checked are programs that are always running. To learn about these, because there are some that should never be unchecked go to this site.

The best way to do this through the programs themselves but the handier version is to do it through msconfig.
start -> run -> msconfig
In the final tab called startup deselect any that you do want to start at startup.
When restart the computer the first time after doing this it will pop up a message to tell you that you have some disabled items. Check the box in the bottom left to say that don't wish to be prompted again otherwise you will get this box everytime you restart.

there are multiple ways you can do it. One way is to right click on that program in your start menu and delet it. Other way to get rid of them is to creat a new folder in your start menu and move those programs in that folder. And there is one more way you can do it is by hidiing those programs. Those program shortcuts remains their but they will not show up in your start menu. To do this you have to right click on the program and click properties. Check the hidden box.
