Ken Hom offers a tasty alternative to the standard stuffed pepper with this exciting aubergine and chilli mix


Ingredients
30ml extra virgin olive oil
2 Romano peppers, cut in half lengthways
1 red onion, cut into small chunks
3 sprigs of thyme
1 small aubergine, cut into small cubes
8 tiny vine tomatoes
1 pack Ken Hom cooks…Vegetable Nasi Goreng Rice
1 jar Ken Hom cooks… Chilli & Garlic with jalapeno peppers


Method

Serves 2

Drizzle the oil into a shallow ovenproof pan. Add the red onion, thyme sprigs, vine tomatoes and aubergine. Season and roast at 200oC /Gas Mark 6 for 15-20 minutes until just tender and roasted.

Mix together the rice and roasted vegetables. Add 45ml of Ken Hom cooks… Chilli & Garlic with jalapeno peppers. Fill the peppers with the mixture. Place on the hot barbecue for 5-8 minutes, then cover with foil or use the barbecue lid.

Serve with any remaining rice and chilli and garlic sauce.

Fried Green Tomatoes
Serves/Yields4-6 servings

Ingredients
3 large green tomatoes
1/2 cup cornmeal
1/4 cup flour
1 tsp salt
1 large egg
1/4 cup water or milk
Oil for frying


Directions
In a bowl combine cornmeal, flour and salt. In another bowl beat egg and milk or water.Wash tomatoes and remove stems. Slice the tomaotes about 1/2 inch thick. Heat oil in a heavy skillet. Dip tomatoe slices in the egg wash and then the cornmeal mixture,making sure to have a nice even coating. When all the slices are coated, fry them a few at a time until crispy and brown on both sides.You will probably need to change the oil in between batches to prevent a build up of burned cornmeal which will make your tomatoe slices appear burned.Place cooked slices on a paper towel lined plate in the oven to keep warm until all are fried.

Easy Eggplant Parmesan
Serves/Yields4 servings

Ingredients
1 medium /large eggplant
1/2 jar Barilla marinara sauce
1 cup fine, dry breadcrumbs
1/2 cup fresh grated parmesan_cheese
4 to 5 slices fresh_mozzerella
4 Tbsp minced basil
Olive_oil for frying
1 large egg
2 Tbsp water
Salt

Directions
Slice eggplant into rounds, about 1/2 inch thick. Sprinkle both sides of each slice with salt and place in a colander set over a plate to drain the bitter juice,about 1 hour.

In a heavy skillet, heat the olive oil over medium high heat.Beat the egg with the water. Dip eggplant slices in the egg and then the breadcrumbs.Fry the eggplant slices a few minutes on each side until golden brown.

Place on paper towels to drain while you cook the remaining slices. It's a good idea to rinse the pan and use fresh oil between batches to avoid burned breadcrumbs on the bottom.

In a large shallow casserole dish, place a thin layer of the sauce,then a layer of eggplant slices sprinkled with half the basil and parmesan. Add another thin layer of sauce followed by remaining eggplant slices, a thin layer of sauce, the remaining parmesan and basil and finally the fresh mozzerella. Bake uncovered at 350 for 20 minutes, until hot and bubbly and cheese is melted.

Marinade fish steak (whatever you fancy, mackerel, tuna, haddock) in lemon juice about two hours. Place on large square of tin foil. Scatter over a mixture of herbs & bread crumbs. Drizzle olive oil. Season. Fold up sides of foil to form domed parcel. Place on baking tray. Gas mark 7 20 minutes. Meanwhile boil peeled potatoes 20 minutes. Drain and mash with butter, cream and seasoning. Lastly cook some sugar snap peas, broccolli florets, sliced red peppers. Place fish on plate first, spoonfuls of mash and vegetables at the side. Thats one suggestion anyway. You get to eat 4 of your 5 a day. Though you could bake wedges out of the potatoes instead. Leaving the skins on is better for you.

How about pasta with a sauce made of canned tomatos, chopped onion, garlic, green pepper, red pepper, mushrooms, chopped green beans, sweetcorn, courgettes, and any other veggies you have lying around!

Fry the onions, garlic and chopped peppers in a little olive oil, add the mushrooms with a splash of lemon juice, then add the rest of the ingredients and simmer until the veggies are all cooked, if you add something like carrots grate them so they cook quicker. This is easy, quick and healthy and you can adapt it to what you have in the fridge. Adding chopped grilled bacon, or sliced sausages to it is delicious too!

Roast beef or chicken with seasoned you like, with carrots, onion, potatoes in a crock pot cooking on low about 3 to 4 hours then turn to high for another 3 to 4 hours or until the meat is tender and in pieces serve with a dinner role. Or make a meatloaf with 2lb of chuck beef, crushed saltine or cheeses nip crackers, 1 chop up green pepper , onion, meat loaf season mix spead a thin layer of catup on top, bake in the oven at 375 for about 45 minute to an hour. on the side green beans, or carrott & peas,and potatoes. call me I will be over for dinner, lol

Nice bit of fish with either a butter or parsley sauce on top of a bed of spinach. Put some bread cubes on top, drizzle with olive oil and bung under the grill until bread is golden.
Chef way: All fresh ingredients, fish & spinach steamed.
Cheats way: Those boil in the bag fish. Microwave the spinach (all while the grill is heating up), the bung them in a bowl and bung the bread cubes on top/ oil then grill.
Quick, easy, delicious.

Just eaten it
put broccoli,carrotts,onions,peppars ,tomatoes,and potatoes cut up so they will all cook together,into a roasting tin,peppar little tomato sauce and a little flora spread ,cover with foil and bake for 30 mins ,uncover bake for 10 mins
Same time skin chicken thighs 2 oxo cubes 1 green peppar cover and cook same time as veg
serve with ready cooked mushroom rice ,lovely .enjoy!

bell peppers, broccli, sliced carrots, snow peas, tofu chunks (or some semi cooked chicken), soy sauce, lil bit of ginger, and some garlic. toss that in a pan and let it cook till the vegies are @ the tender/crunchy ness that you want then enjoy

you can always cook a stirfry using cut up chicken breasts or lean steak cut thinly. they have pre packaged veggies in the frozen food section all you do is add beef or chicken or you can pick from a variety of fresh veggies just cut up and cook your meat first then add the veggies and steam about 5-8 minutes and serve with brown rice hope this helps

You can't beat a stir fry with lots of veggies, served on a bed of rice. Get yourself a wauk if you don't already have one. They really do work better for stir fries than a regular pan. You'll find all kinds of stir fry recipies on the internet.
