Will you stir fry your snake meat??? How about having snake meat in soup?? Here is a Cantonese recipe for Snake Soup.
<<<<<<< Snake Meat Shreds Soup >>>>>>>> Serves 4
300g snake meat (shredded)
2 big slices of ginger (crushed)
3 eggs (beat with a pinch of salt, pan fried in thin layer and shredded)
100g pork (shredded, marinated with salt + sugar + cooking wine + garlic powder)
5 dried mushroom shreds
6 dried longan pulp
dried orange peel grains
chicken soup (1 whole skinless chicken + 20 g ginger root + 200g soy bean sprouts + dry dates, long boiled in low heat for 2 hours)
green onions (cut to 2 inches in length)
rice wine
salt
sugar
pepper
gourmet powder
1 tablespoon of corn starch + 2 tablespoon of water
sesame oil
chive (finely chopped)
white chrysanthemum (optional, petals only)
crispy chips (optional)
1. Clean the killed snake. Put it in boiling water, then add green onions, ginger, wine, and stew for half an hour. Take the meat out and tear it into shreds, set aside.
2. Prepare the long boiled chicken soup - clean the chicken, boil it with in hot water for 3 minutes, wash away the blood under running tap water for 3 to 5 minutes. Boil a big pot of water in high heat, put the chicken, ginger, soy bean sprouts, dried dates into the pot and boil for 15 minutes, reduce the heat to low and cook for about 2 hours.
3. Put the snake meat shreds, mushroom shreds, dry longan pulps, dried orange peel grains, in 1000g delicious soup in a pot. Braise them to boiling and then take away the foam, add pork shreds into the soup. Mix gourmet powder, salt, sugar, rice wine and corn starch with water. Pour in the mixture into the soup to thicken the soup, add egg shreds into the soup, stir and turn off the heat
4. Add sesame oil, pepper and place the soup in a casserole and serve with crisp chips, chive shreds, white chrysanthemum, and other seasonings (1 or 2 drops of soy sauce or grounded black pepper)
As for the side dish, I would suggest you to have frog legs, it is yummy and crispy. If you want something typical, deep fried chicken wings are nice too!
<<<<<<>>>>>
600g Medium frog legs (skinless)
1/2 cup flour
1 tablespoon lemon pepper seasoning
1 teaspoon salt
1 teaspoon black pepper
2 eggs, beaten
bread crumbs (crispy one)
Vegetable oil for frying
Wash frog legs in cold water, drain. Put flour, lemon pepper, salt and black pepper in a bag and shake to mix. Shake frog legs in the seasoned flour to coat, dip in beaten egg and roll in bread crumbs.
Deep fry at 365 degrees for 7 to 8 minutes or until golden brown.
Top some fresh squeezed lime or lemon juice or tartar sauce when serve.

I would suggest rice and some sort of bread or rolls. Salad on the side would make the meal complete. FYI You can use the head, tail and skin for your centerpiece. lol Bon Apatit

Stir fry vegetables would be a nice side dish. If your snake is small you may want to try a soup.
