Don't sneak meat into their diet! They're vegetarian for a reason (whatever their reason may be) and thus they've made a conscious decision to not eat meat. Why would you as their so-called "friend" try to do something that goes against their chosen lifestyle????
Besides, your question is based on a false premise. You are assuming that eating meat will cure them of their paleness, when you don't know what's causing them to be pale in the first place.

It's harder to get a balanced diet if you a vegetarian since you need to ensure that you get the proper balance of nutrients. The best thing you can do is suggest that they check that they're getting the right balance of food. There are plenty of resources on the internet to healthy eating plans.
Oh, I'm a vegetarian and if you ever tried to "sneak some meat" into my diet I would not be happy.

I am not a vegetarian, but you can lead a healthy life without meat. Make sure they are taking in enough protein. You can't live on veggies and bread alone. Make sure they are eating nuts, beans, and varying their diets. Meat alternatives give all the nutrients of meat, without the guilt.

It just sounds like they are a little on the anaemic side. Make healthy vegetarian meals with plenty of protein and iron in it.

She's anemic probably but that doesn't mean meat is the only cure. Any foods high in iron will help her. I would suggest spinach but right now in the US that's off the shelves. Still, she could have frozen spinach. Sesame seeds, watercress, almonds, dried figs, all have a nice amount of iron.

I would never sneak anything into her diet. That would be controlling and manipulative. Talk to her and suggest your concerns. It is very likely that she could be anemic. Encourage her to eat more beans as they are very high in iron. Encourage vit C as well, as it helps the absorbtion iron. You could suggest that she goes to the doctor and get her iron tested. Please don't sneak anything into her diet, this is obviously a choice she has made for her own reasons. You would betray her trust and hurt her.

Meat will not do it and that would be a very dirty trick to play on him/her. We become vegetarians because of certain ethical beliefs and principles.
If you are truly this person's friend, tell him/her of your concern. If someone is anemic, he needs iron, not meat.

If your friend is not getting enough protein out of vegetables, get them to add soy, tofu, or beans (pinto or black, especially). Also, paleness may be due to lack of sun (Vitamin D) or exercise.
This way you won't lose a friend by being sneaky. There may be health reasons - as well as personal choice - that he/she is a vegetarian.

no meat, plenty of spinach, aurbangine, okra, dried beans boild of course, and also take a course of iron tablets for 28 days to build it up. Please do not sneak meat into their diet. I am a vegetarian and diabetic and have no problem.

she can always try eating soy or tofu products which have nothing to do with meat and rich in protien which is what your friend is lacking in her diet or she can try veggie burgers instead of the salad for a change of pace but she needs more protien in her diet this is what is making her look sick she needs more than just salads in her diet
