The easiest way is just to throw them in the freezer.. yep skins and all. When you are ready to use them for baking, just defrost, snip off the tip with scissors and squeeze out like toothpaste!! If you want nice chunks for smoothies, slice and flash freeze and then package together. Just use what you need.. Simple!!

Leave the banana in th skin and place it in the freezer...it will be fine if it doesn't get crush while it's freezing.
Banana Ice Cream
Yield: about 1 quart
6 (approximately 2-1/4 pounds) ripe bananas
1 tablespoon fresh squeezed lemon juice
3/4 cup light corn syrup
1 vanilla bean, scraped
1-1/2 cups heavy cream
Place bananas in freezer and freeze overnight. Remove bananas from freezer and allow to thaw for 45 minutes to 1 hour. Peel bananas and place in bowl of food processor along with the lemon juice. Process for 10-15 seconds. Add corn syrup and vanilla bean seeds and turn processor on. Slowly pour in the heavy cream. Process until smooth.
Chill mixture in refrigerator until it reaches 40ºF. Transfer the mixture to an ice cream maker and process according to the manufacturer's instructions. Place mixture in an airtight container and freeze for 3-6 hours before serving.

You don't have to freeze bananas to make smoothies- we make smoothies with bananas all the time and all you have to do is cut the banana in, say, 5-10 pieces and throw them in!

when I have very ripe bananas and I know they are OK to use in recipes that call for "ripe" bananas, I freeze 3-4 unpeeled, in freezer bags (I use 2, bags). Then, when I need them, I take them out and partially thaw them, peel, and place in a bowl to thaw completely in order to drain liquid that naturally accumulates from frozen fruit that is not packaged in syrup. (Like fresh peaches). Then, I add to favorite recipes that I am making. Alot of recipes call for 3 med. bananas and I allow 1 extra when frozen, because there seems to be less volumn after frozen. NOW, PLEASE UNDERSTAND THAT THIS IS FROM MY OWN EXPERIMENTATION and it works for me so don't think that I got this from a book. I hope this helps a little in regard to freezing. Good Luck!

You can chop them and freeze them or freeze them whole. They make an instant banana ice cream if you put them in the food processor with milk or cream and a bit of stem ginger. It takes a couple of minutes so don't give up.

Whenever you freeze bananas, they go brown and slimy once you defrost them (I suppose that's why you asked the question!). It's annoying, but there isn't much you can do about it - they're still fine to eat though. Although they don't look very appetising, frozen bananas can still be used for baking and other uses.

Freeze whole in skins and don't defrost before using (they go brown and soggy). Just put them into your smoothie mix and crush like ice.

Either freeze the bananas whole in their peel;
or peel and sprinkle with lemon juice before wrapping airtight.
Or you could puree them before freezing and freeze the puree in airtight containers (tupperware type).

Domestically: Peel them .. wrap in palstic wrap really tight.. them place in the freezer...
Internationally: Peel Them... wrap in plastic film tightly... deposit into the ice chest
