You can use the Splenda baking blend for the sugar, but in my opinion, if you're going to bake a cake, you might as well bake a cake!! Everyone deserves to splurge once in a while! Let your hair down and enjoy your sugar and forget the margarine, use real unsalted butter for a change. It's actually better for you in the long run than margarine and makes a better cake.

If you absolutely MUST substitute, try the Splenda baking blend, which incorporates some Splenda and some sugar. Also, try I Can't Believe It's Not Butter rather than either margarine OR butter. In place of eggs, you may want to try applesauce or an egg substitute that uses only egg whites (usually found on the top shelf above the eggs in the grocery shelf).

I've also substituted my meringue powder for eggs before with decent results (I was out of eggs)!!

As for oil, look for the lightest colored oil on the shelf, usually sunflower oil.

Substitute sugar with Splenda. It is a fairly new artificial sweetener and is quite good. Equal is also good but I think Splenda is a lot better. Also you can cut milk calories by using skim milk or powdered milk instead of whole milk. 2% or 1% milk is also better than whole milk. Eggs you can use those like EggBeaters(the ones that come in little milk type cartons but I never substitute the eggs. Cakes are loaded with calories and sugars at any bakery, grocery or restaurant you go. Unless you buy a brand like Entemann's low calorie, Dr. Atkin's or any other similar brand who specifically prepare diet foods you will only be eating high sugar, high calorie desserts. You can experiment yourself until you find the right combination resulting in something edible with just the right amount of calories. Remember, if you eat in excess of what you're allowed even if it is diet food is the same as eating regular food. If a piece of cake has 400 calories and the diet one has only 200 and you think then you can have two pieces of the diet one because it is less calories, don't waste your time then. Just eat the rich one laden with the all the good stuff in it.
It all amounts to the same thing then. Margarine and butter have the same amount of calories (100 per tbsp.) and oil also has the same. Some oils are healthier than others so it may be better to use them inteasd of butter or margarine. I have not seen diet frostings in a can yet, but there may be some recipes by Splenda Buttercream frosting is nothing but Crisco(shortening), little water, and confectione's sugar. Loaded with calories, sugars and fats. Go on the internet and search for diet cake recipes, you may find something to your taste.

Hmmm. I would definitely substitute butter for margarine or shortening, both of which are trans fatty acids and far worse for you. As for sugar, any substitute would, I think, affect texture. I'm skeptical of ALL of the "sugarless" substitutes such as Splenda, Equal, etc. They seem to have a lot of adverse potential side effects. You can substitute plain yogurt for sour cream. Have your tried googling for healthy desserts? You might find a lot of tested recipes that way.

Or you could take Julia Child's advice and just eat smaller portions....

Yes, there are great substitues. Applesauce makes a good sweetener for cakes, and keeps them moist. Use Margarine instead of butter to lower fat content.

I recommend a great book called 'Butter Busters'. I've tried many of the low fat recipes and ideas in this book and they are great.

I was recently diagnosed with diabetes. I wanted to makes the changes necessary in my diet, but did NOT want to give up some of my favorite foods.

I felt blessed to find both, the sugar substitute, Splenda, and the recipe site, recipezaar.com

They offer a choice to select diabetes friendly recipes, which would fit your criteria.

The link below is directly to "Diabetic Recipes", but be sure to check out the home page too. On the lower left of the home page, is a link to find more diabetic friendly recipes, not necessarily "deemed' diabetic.
