Roast Turkey Breast with Fresh Herbs Turkey breast has half the fat of dark meat -- and when you follow our recipe and roast it in a cooking bag, it stays juicy, tender and absolutely delicious.

Ingredients:

Qty. Measurement Description
1 tablespoon flour
2 sprigs fresh sage
2 sprigs fresh thyme
2 sprigs fresh parsley
1 medium onion, sliced
1 4- to 6-lb. skinned, bone-in turkey breast
Salt and freshly ground black pepper
1/4 cup dry sherry or low-sodium chicken broth

Cook:over 60 minutes (cooking time)

Preparation:

1. Preheat oven to 350 degrees F.
2. Shake flour into a large (14 x 20 inch) oven-cooking bag. Set the bag in a large baking pan.
3. Place the sage, thyme, parsley and onion slices in the bottom of the bag. Sprinkle the turkey breast with salt and pepper and place it, bone side down, on top of the herbs in the bag.
4. Pour sherry or broth over the turkey. Close the bag with a nylon tie and snip a 6 1/2-inch slit in the top of the bag.
5. Roast for about 1 1/2 to 2 hours, or until an instant-read meat thermometer registers 170 degrees F.
6. Remove pan from oven. Let the turkey stand in the bag for about 10 minutes to make slicing easier.
7. Strain the drippings from the bag into a small bowl and freeze briefly. Skim fat off the top. Pour over sliced turkey.

i have found that if a bake a turkey breast on it own it has tendanices not to have much skin or natural fat..i found if you take some strips of bacon an cover the breast it will retain its own natural flavor..after adding strips cook it the same way you cook any roast chiox or turkey...cover with foil and then the last 1/2 hr remove the foil...if you are having green beans or a salad..the chopped up bacon adds a little zest to the dish........

the best way to cook it is deep fry in peanut oil. thats what we use here in the south! inject turkey breast with leman pepper marinade found at most stores. and fry in peanut oil. to deep golden brown. juicy and the skin is crisp. make sure not to over fill your pan with oil. this will cause a fire. and stay near when cooking. serve turkey with a side of glazed butter yams. and garnish with a little dried cranberries. serve with white wine and crisp lemenade for the kids

clean it I mean rinse with cold water pat dry with towel or paper towel use spray butter on inside od breast put salt and garlic powder(OPTIONAL) rub with butter put in oven at 350 for about 1 1/2 hours or you can do the same only baste with oil and put on a rotisere on the grill until done . if you are into great taste sprinkle lawerys season salt on the inside and outsie of breast.

Rub it down with Cajun seasonings and deep fry it. You will be surprised how moist the turkey comes out and the seasoned skin is to die for. Good stuff!

Mmmmmm.Grill will better better then bake and put Spirke on you turkey breast. I is not hot but a got seosn

you can cook it the same way you would cook a regular turkey, slice and grill, bbq, etc. use the same spices as you would for a whole turkey. I use a mixture of salt, poultry seasoning, a little garlic powder and a bit of pepper. mmmmmm yummy
If you wrap it in foil, it and a bit of water, it won't get dry, and if you bbq it, use your favourite bbq sauce.

my family really enjoys it when l cook this in the oven and l
pour a tin of tomatoes over the turkey breast and when its
almost cooked l put some rice in with it and some frozen
peas.
